Kid Pleaser Vegetarian Manicotti

Ingredients
- Servings: 5
- 4 cups spinach
- 1/4 cup schredded parmesan cheese
- 1 cup low-fat ricotta cheese
- 1/2 cup vegan sour cream
- 1/2 cup shredded mozzarella cheese
- 4 garlic cloves
- 2 cups spaghetti sauce, divided
- 12 manicotti
Recipe
- 1 boil the manicotti shells til they are half way cooked.
- 2 chop up the spinach fairly small.
- 3 shred the cheese and mince the garlic.
- 4 add all the ingredients except the shells in a large bowl and mix well.
- 5 drain the shells and let cool, i like to rinse them with cool water and use immediately so they don't get stuck together.
- 6 stuff the shells.
- 7 bake uncovered at 350 degrees for 30 minutes.
- 8 voila! you're done!
