Kid Pleaser Vegetarian Manicotti

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 5
  • 4 cups spinach
  • 1/4 cup schredded parmesan cheese
  • 1 cup low-fat ricotta cheese
  • 1/2 cup vegan sour cream
  • 1/2 cup shredded mozzarella cheese
  • 4 garlic cloves
  • 2 cups spaghetti sauce, divided
  • 12 manicotti

Recipe

  • 1 boil the manicotti shells til they are half way cooked.
  • 2 chop up the spinach fairly small.
  • 3 shred the cheese and mince the garlic.
  • 4 add all the ingredients except the shells in a large bowl and mix well.
  • 5 drain the shells and let cool, i like to rinse them with cool water and use immediately so they don't get stuck together.
  • 6 stuff the shells.
  • 7 bake uncovered at 350 degrees for 30 minutes.
  • 8 voila! you're done!
