Last Minute Lasagna

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • Servings: 6
  • 24 ounces pasta sauce
  • 2 (16 ounce) bags frozen cheese ravioli
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 8 ounces mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, finely grated

Recipe

  • 1 preheat oven to 350of.
  • 2 oil a 9x13 in baking dish.
  • 3 empty ravioli into collander and rinse to separate them. set aside.
  • 4 spoon 1/3 of the pasta sauce on the bottom of the dish spreading it out.
  • 5 place 1/2 the ravioli over the sauce in a single layer.
  • 6 top with 1/3 of the pasta sauce.
  • 7 sprinkle with the spinach and layer 1/2 the mozzarella on top of that.
  • 8 add the remaining ravioli in a single layer.
  • 9 top with the remaining sauce, mozzarella and parmesan.
  • 10 cover with foil and bake 30-40 minutes.
  • 11 uncover and bake until bubbling, about 10 more minutes.

Momma's Made-better Chicken And Rice

Ingredients

  • 2 cups grilled chopped boneless skinless chicken breasts
  • 3/4 cup chopped fresh mushrooms
  • 3/4 cup chopped celery
  • 3/4 cup chopped onion
  • 3/4 cup sliced carrot
  • 1/3 cup chopped red bell pepper
  • 2 garlic cloves, pressed or minced
  • 3/4 cup uncooked rice
  • 2 chicken bouillon cubes (or 2 tsp boullion)
  • 4 tablespoons fresh parsley
  • 3 teaspoons fresh thyme
  • 1 teaspoon sea salt
  • 1 tablespoon olive oil
  • 1 tablespoon butter, unsalted
  • 2 cups water

Recipe

  • 1 first, heat skillet on med-high and then add olive oil and butter to melt.
  • 2 add the following: celery, onion, carrot, garlic, and red bell pepper and saute for 2 minutes. add mushrooms and saute another minute more. add rice and saute for 1 minute.
  • 3 add chicken, water, boullion cubes, sea salt and thyme. cook until rice is tender, about 20-25 minutes on medium heat.
  • 4 stir in parsley and serve hot with soy sauce, if desired.

Lasagne Style Mac And Cheese With Pepperoni

Ingredients

  • Servings: 8
  • salt & freshly ground black pepper
  • 1 lb lasagna noodle
  • olive oil
  • 4 tablespoons butter, plus
  • 1 tablespoon butter
  • 1 teaspoon garlic, minced
  • 4 tablespoons all-purpose flour
  • 2 1/2 cups half-and-half
  • 2 1/2 cups grated parmigiano-reggiano cheese
  • 4 ounces grated cheddar cheese
  • 8 ounces grated mozzarella cheese
  • 1 lb pepperoni, sliced thin
  • 1/2 cup fresh breadcrumb

Recipe

  • 1 fill a large pot with water and bring to a boil over high heat. add 1 tablespoon salt carefully add the lasagna noodles. return to a boil, reduce the heat to a low boil and cook for about 5 minutes, or until pasta is very al dente (slightly undercooked). drain in a colander, rinse slightly and drizzle with olive oil to prevent sticking.
  • 2 in a heavy, medium saucepan melt 4 tablespoons of the butter over low heat. add the garlic and then the flour and stir to combine. cook, stirring constantly, for 3 minutes. increase the heat to medium and whisk in the half-and-half little by little. cook until thickened, about 4 to 5 minutes, stirring frequently. remove from the heat; add 2 cups of the grated parmesan. season with the salt, pepper and stir until cheese is melted and sauce is smooth. cover and set aside.
  • 3 preheat the oven to 375 degrees f.
  • 4 in a large bowl combine 1/4 cup parmesan, cheddar, and mozzarella. toss to combine.
  • 5 grease a 3-quart baking dish or casserole with 1 tablespoon of butter. spread a ladle full of sauce on the bottom of the pan. cover the sauce with a single layer of cooked lasagna noodles. spread another ladle full of sauce on top of noodles. sprinkle with 1/3 of the mozzarella cheese mixture. top with 1/3 of the sliced pepperoni. repeat with remaining ingredients for 2 more layers.
  • 6 sprinkle 1/2 cup bread crumbs onto top of lasagna and top with remaining grated parmesan, 1/4 cup. bake, uncovered, for 40 to 45 minutes or until the lasagna is bubbly and hot and the top is golden brown. remove from the oven and allow to sit for 5 minutes before serving.

Momma's Old Fashioned Cornbread Dressing

Ingredients

  • 8 cups cornbread
  • 4 cups dried bread
  • 2 cups saltine crackers
  • 1 cup cooked rice
  • 1 cup raw carrot
  • 1 cup yellow onion
  • 1 cup celery
  • 4 -5 cups turkey broth or 4 -5 cups chicken broth

  • pepper

Recipe

  • 1 cook carrots, onions and celery in 1 tablespoon of butter with chicken or turkey broth until they become tender, about 15 minutes on medium-high heat.
  • 2 crumble the cornbread, crackers and toasted bread in large bowl.
  • 3 add the rice cooked or instant rice.
  • 4 preheat over to 375 degrees.
  • 5 do not drain the broth from the vegetables, as you will not pour it all into the dry mixture.
  • 6 add broth to become very moist.
  • 7 add salt, pepper and sage to taste. i usually use 5 - 6 tablespoons sage to mine.
  • 8 put in lightly greased cooking pan and cover with foil. be sure to poke a few holes in the foil before placing into over.
  • 9 let bake for about 30 minutes before you remove the foil. then bake another 10 - 15 minutes to brown a little.

  • 2 lbs ground beef
  • 1 chopped onion
  • 2 chopped garlic cloves
  • 32 ounces whole tomatoes
  • 2 (16 ounce) cans tomato sauce
  • 1 tablespoon parsley
  • 2 teaspoons basil
  • 1 teaspoon salt
  • 16 ounces mozzarella cheese
  • 1 (16 ounce) carton cottage cheese
  • 1 cup parmesan cheese
  • 2 eggs
  • 1 -2 teaspoon oregano
  • 1 tablespoon parsley
  • 12 cooked lasagna noodles

Recipe

  • 1 brown ground beef with chopped onion and garlic. drain and rinse to remove excess fat. mix in large sauce pot with tomatoes, tomato sauce, basil, parsley, salt. simmer until liquid reduces, and sauce is thick, breaking up tomatoes with a fork. place in refrigerator overnight. this will help flavor meld.
  • 2 when ready to assemble, cook lasagne noodles as directed on package. drain and place noodles on paper towels to drain. combine ingredients for cheese mixture and then layer noodles, meat sauce, cheese mixture, mozzarella cheese. repeat until placing last layer of noodles. place small amount of meat sauce on top and sprinkle with parmesan cheese and parsley.

Oh So Good Rice Krispies Cake

Ingredients

  • 1/4 cup butter
  • 1 (250 g) bag miniature marshmallows (about 4 cups)
  • 1/2 teaspoon vanilla
  • 6 cups rice krispies
  • 1/2 cup butter
  • 4 macintosh toffee bars (macintoch bars work well)
  • 1 (14 ounce) can sweetened condensed milk
  • 0.5 (16 ounce) bag miniature marshmallows

Recipe

  • 1 melt first amount of butter and marshmallows in microwave for 2 minutes on high.
  • 2 mix until mixture is well blended.
  • 3 stir in vanilla and cereal until well coated with marshmallow mixture.
  • 4 press warm marshmallow mixture in a large greased cake pan, (lasagna size pan works well). cool.
  • 5 melt the second amount of butter, toffee bars and condensed milk in microwave or over low heat on the stove, be careful not to burn.
  • 6 spread toffee mixture over r.k.cake layer, then sprinkle with a layer of marshmallows. cool.
  • 7 top with another layer of a regular recipe of rice krispies cake. cool.

Nacho Chicken Casserole

  • 2 cups cooked chicken, diced
  • 1/2 cup instant rice, uncooked
  • 14 1/2 ounces diced tomatoes, drained

  • 1 teaspoon taco seasoning

  • 1 heat oven to 350 degrees. spray 2 quart casserole with cooking spray. in casserole, stir chicken, rice, tomatoes, soup, corn, chiles, taco seasoning mix and 1 cup of the cheese until well mixed.
  • 2 cover and bake about 1 hour or until rice is tender and mixture is heated through. top with tortilla chips; sprinkle with remaining 1/2 cup cheese. bake about 10 minutes longer or until filling is bubbly and cheese is melted.

  • 3 tablespoons cornstarch, and water, to thicken
  • 3 cups egg noodles

Recipe

  • 1 sautee garilc in the olive oil.
  • 2 season meat with salt and pepper.
  • 3 brown the beef in the olive oil.
  • 4 add consomme and water.
  • 5 simmer for an hour on low.
  • 6 add sour cream.
  • 7 thicken with corn starch and water mixture to desired thickness.
  • 8 serve over rice or egg noodles.

  • 100 g mascarpone cheese
  • 3 teaspoons cream
  • 1 teaspoon saffron
  • 1 ripe banana
  • 200 g frozen blueberries

  • 1 cup finely chopped yellow onion
  • 3 -4 minced garlic cloves
  • 3/4-1 lb ground beef
  • 1 (28 ounce) can crushed tomatoes
  • 1 (8 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 1/2 cup red wine
  • 2 tablespoons worcestershire sauce
  • 1 1/4 teaspoons salt
  • 1 teaspoon seasoning salt
  • 1 teaspoon sugar
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 3 dashes tabasco sauce
  • 1 dash black pepper
  • lasagna noodle
  • 1 lb lasagna noodle
  • 1 cup low fat cottage cheese
  • 1 cup fresh parmesan cheese, shredded
  • 1 lb mozzarella cheese

Recipe

  • 1 heat olive oil in skillet.
  • 2 saute onion, garlic, and meat.
  • 3 mix in separate pot first the rest of sauce ingredients, then add to the meat mixture, cover, simmer/low boil, 1 hour, stirring occasionally.
  • 4 cook noodles to tender, not full. drain in cold water, blot dry and set aside.
  • 5 putting together:.
  • 6 spread sauce, thin! layer.
  • 7 cover with 3 (or 4 if you’re using larger baking dish) noodles.

  • 14 let sit in fridge overnight (or if you need to, you can cook it now - reduce cooking time by about 10 minutes or so). take out of fridge 30-60 minutes before cooking. bake at 350 degrees for 40 minutes, or until golden hot and bubbly (make sure middle is hot!).

Perfect Rice Pilaf

  • 3 1/2 cups low sodium chicken broth
  • 1/4 cup light soy sauce (low sodium)
  • 1 1/2 ounces onion soup mix
  • 1 (10 ounce) can mushrooms
  • 1 onion, chopped
  • 2 celery ribs, chopped
  • 1 bell pepper, chopped (red or green)
  • salt and pepper

Recipe

  • 1 mix all ingredients together in a casserole dish and bake at 350f for 1 1/2 hours, stirring frequently.

Mike's New England Chicken, Italian Sausage And Garden Green Pep

  • 1 green bell pepper, cut into 1/2 inch strips
  • 3 garlic cloves, minced
  • 1 onion, sliced thin
  • 1/2 lb fresh mushrooms, sliced
  • 2 tablespoons olive oil
  • 1/2 lb boneless skinless chicken breast, cut into 1/2 inch strips
  • 1/2 lb hot italian sausage link, casings removed and cut into 1/2 inch thick pieces
  • 1 (14 ounce) can tomatoes, chopped, including juice
  • 1/4 cup italian dry red wine
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon sugar
  • 1 lb spaghetti
  • 1/4 cup heavy cream
  • 1/4 cup parmesan cheese, grated for sprinkling
  • fresh parsley (optional)

  • 1 1/4 cups dried garbanzo beans
  • 3 tablespoons oil
  • 2 medium yellow onions, chopped
  • 1 lb beef bones with marrow
  • 3 lbs beef chuck roast
  • 12 potatoes, peeled
  • 1 sweet potato, peeled
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • 2 teaspoons salt

Recipe

  • 1 boil couscous in six cups of water; cover, remove from heat, and let stand for 20 to 30 minutes; chill uncovered.
  • 2 for vinaigrette, place all items, except oil and baby corn, in food processor and drizzle in oil while blending.
  • 3 or, finely chop ingredients by hand and blend with a wire whisk.
  • 4 mix couscous, baby corn, vinaigrette, and all other ingredients; chill overnight.

Marinated Herbed Grilled Chicken

  • 1 in a gallon sized ziploc baggie take all the above listed ingredients.
  • 2 and thrown in any desired chicken pieces.
  • 3 you can use a whole chicken or drunsticks or thighs or breasts.
  • 4 i used about 6-8 thighs and marinate at least 4 hours overnight is better turning every 4 hours or so.
  • 5 heat a grill on one side on medium high heat making sure to place the chicken on the side of the grill that doesnt have fire underneath as the oil will cause it to flame and burn cook untill 165 degrees or juices run clear
  • 6 cooking times will vary depending on the grill you use my grill is a charcoal grill and took about 20-35 minutes depending on breast size you will need to adjust accordingly also i prefer to let my chicken set just a minute or 2 before servig i also served this with my quick and easy mederterainian rice recipe.

Lentil And Brown Rice Soup

  • 1 in a large stock pot, sauté chicken until cooked through. remove to a bowl. add wild rice to the bowl. mix in the half and half, sherry, and flour. set aside.
  • 2 in the same pot, melt butter. cook onion until soft and translucent. add carrots and celery, salt, pepper, and thyme. cook, stirring, for about 5 minutes.
  • 3 add chicken broth. bring to a boil, reduce heat, cover and simmer for about 15 minutes, or until carrots and celery are softened to your liking.
  • 4 stir in the wild rice and chicken mixture. cook, stirring, for about 5 minutes, until heated through.

Nacho Macaroni And Cheese

  • 1 liter milk
  • 60 g butter
  • 60 g flour
  • 500 g minced beef

  • 2 (8 ounce) cans plum tomatoes
  • 150 ml red wine
  • 1 tablespoon olive oil
  • 1 pinch salt

Recipe

  • 1 sauce: heat the butter, add the flour and cook for 10 mins until it has formed a "honeycomb consistency", or roux. slowly add the warm milk in stages, stirring continually until it has a "sauce-like" consistency.
  • 2 bolognese: sweat the chopped vegetables in olive oil, add the mince and a pinch of salt. when all the liquid from the mince has evaporated, add the red wine and, when evaporated, add the tinned plum tomatoes. cook gently for 2 hours on a very low heat.
  • 3 mix the bolognese with the bechamel. check the seasoning.
  • 4 in a baking dish add a couple of ladles of bechamel and sauce. lay a sheet of pasta on top. add more sauce on the top and spread with parmesan. continue until the dish is full.
  • 5 cook in the oven for 25-40 minutes at 180°c.

Marinated Hoisin Chicken

  • 1 mix all ingerdients except chicken in a bowl.
  • 2 place in a plastic bag with the chicken.
  • 3 marinate in refrigerator 6-24 hours , turning often (overnight is best).
  • 4 arrange chicken in single layer in glass baking dish.
  • 5 bake, uncovered, 20-25 minutes .

Momma's Pot Roast

  • 3 -5 lbs rump roast

  • 3 garlic cloves
  • salt
  • pepper
  • water
  • 1 (7/8 ounce) packet brown gravy mix

Recipe

  • 1 pre-heat oven to 450 degrees.
  • 2 put a 3-5 lb roast (i use rump roast) fat side up in a roasting pan.
  • 3 add salt and pepper (to taste) all over roast.
  • 4 mince 3 cloves of garlic and put on top of roast (fat side up).
  • 5 put water in pan. about 3/4'' up the roast.
  • 6 cover tightly with foil and place in preheated oven for 1 hour.
  • 7 after 1 hour, take roast out and add more water, back to 3/4'' up roast.
  • 8 lower oven to 350 degrees and place back in oven for another hour (still wrapped in foil).
  • 9 after another hour, add the gravy packet to the juice, mixing well.
  • 10 then add as many potatoes as you want, cut in 1/4's. (i use russet potatoes) in the juice surrounding the roast and add more salt and pepper to the potatoes.
  • 11 cover again with foil, and place in oven for an additional 25 minutes.
  • 12 take foil off, and cook another 20 minutes or until potatoes are done, enjoy! ( i also serve with rice).

Luxury Cannelloni

  • 8 sheets lasagna noodles
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1 finely chopped shallot
  • 4 tablespoons chopped fresh parsley
  • 20 g dried morels, soaked in water according to package instructions, bigger ones halved
  • 13 g dried mushrooms, soaked in water according to package instructions
  • 2 tablespoons cognac or 2 tablespoons marsala
  • 1 cup whipping cream (250ml)
  • 1/2 teaspoon salt
  • fresh ground pepper
  • 3 tablespoons grated parmesan cheese

Recipe

  • 1 filling:.
  • 2 melt butter in a saucepan on low heat. add the chopped shallot and cook gently until soft but not browned. add the soaked morels, mushrooms and parsley. add the cognac (or marsala) and the whipping cream. cook on low heat for five minutes. take off the heat and add the parmesan. keep warm.
  • 3 lasagne sheets:.
  • 4 in the meantime cook the lasagne sheets according to package instruction in salted water. drain well on a kitchen towel and immediately fill with the filling. roll up and serve on individual plates. you may want to ladle some of the filling on top of the rolls. enjoy.

Midgnight Garden Chicken Casserole

Marinated Orange Stir Fry Chicken

  • 1 cup orange juice
  • 1 clove garlic, minced
  • 1/4 teaspoon ground ginger
  • 3 tablespoons soy sauce

  • 1 tablespoon vegetable oil
  • 1 tablespoon cornstarch
  • 1 (6 ounce) package frozen pea pods, thawed

  • 1 stir together orange juice and peel, garlic, soy sauce, and ginger.
  • 2 reserve 1/2 cup and put the rest into a bowl.
  • 3 add chicken to marinade in bowl.
  • 4 let sit 15 minutes.

Phyllo, Bread And Pudding

Old Fashioned Rice Custard

Recipe

  • 1 in the top of a double boiler, combine rice and 2 cups milk.
  • 2 cook, stirring occasionally, over boiling water until rice is tender and most of milk has evaporated, about 45 minutes.
  • 3 stir in butter.
  • 4 beat eggs; blend in sugar, vanilla, salt and remaining 2 cups milk.
  • 5 stir into the hot rice mixture.
  • 6 pour into a lightly buttered 2 quart casserole and top with nutmeg or cinnamon.

Lentil And Corn Soup (daal)

  • 1/2-1 cup split red lentils (wash thoroughly)

  • 1 pinch mixed herbs
  • 1 clove

  • 1 pinch cumin seed
  • 2 tablespoons corn (optional)

  • 1 throw in all the ingredients into a pan (except for the garlic and dry chilies). pour in enough water to cover the lentils and a little more. simmer until the the lentils are cooked; for me this is when the lentils appear a little mushy, but still retaining a little structure. you can leave the salt out at this stage and add right at the end to taste.
  • 2 add the corn - as much as you want, but do not overcrowd.
  • 3 once you feel the soup is done, you can now prepare the garlic and dry chilies by frying gently in olive oil. once done, add this to the soup (but be careful - the soup might go into a frenzy and spit at you, so stand back and keep children away). stir thoroughly.

  • 1/4 cup flour
  • 1 3/4 cups evaporated milk
  • 1 teaspoon salt

Recipe

  • 1 cook pasta as directed on package.
  • 2 drain tuna reserving the liquid, add lemon juice and refrigerate.
  • 3 meanwhile, melt the 2 tablespoons butter in large skillet over medium heat and saute the onion and mushroom slices until soft.
  • 4 stir in the flour until blended and cook over low heat until bubbly (stirring constantly).
  • 5 stir in the evaporated milk and add the reserved tuna oil and cook stirring constantly, until mixture thickens.
  • 6 stir in salt and pepper and adjust seasoning as needed.
  • 7 gently stir the tuna with the sauce and heat through.
  • 8 drained pasta and serve warm with the tuna and sauce mixture.

Lemony Tuna Pasta

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1/2 cup butter
  • 2 cloves garlic, minced
  • 1 teaspoon lemon, rind of
  • 1 teaspoon basil, crumbled
  • 1 teaspoon dried parsley, crumbled
  • 1/3 cup dry wine
  • 2 tablespoons flour
  • salt, to taste
  • fresh ground pepper, to taste
  • 2 (6 1/2 ounce) cans tuna packed in oil, drained
  • 1 lb medium pasta shell, just cooked
  • lemon wedge
  • parmesan cheese, freshly grated

Recipe

  • 1 melt butter in a heavy large skillet over medium heat.
  • 2 add garlic, lemon peel and herbs; cook stirring occasionally approximately 5 minutes, being careful not to burn garlic.
  • 3 gradually add flour, stir till blended.
  • 4 gradually add wine, stir till blended.
  • 5 season with salt and pepper.
  • 6 stir until sauce thickens, about 1 minute.
  • 7 mix in tuna, heat through.
  • 8 place shells in serving bowl, pour sauce over and toss.
  • 9 garnish with lemon wedges and freshly grated parmesan cheese.

Picante Chicken

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 4 chicken breasts or 1 1/2 lbs any chicken pieces
  • 2 tablespoons olive oil
  • 4 tablespoons butter (divided in 1/2)
  • 1 large onion, chopped
  • 4 garlic cloves, choppped
  • 1 cup picante sauce
  • 1/2 cup chicken broth
  • 1/4 cup parsley, chopped
  • 1/4 cup cheddar cheese or 1/4 cup monterey jack cheese, grated

Recipe

  • 1 heat a large skillet.
  • 2 salt and pepper chicken pieces.
  • 3 add olive oil to skillet.
  • 4 add chicken, onion, garlic, and 2 t. butter.
  • 5 sear chicken on both sides for 5 minutes per side.
  • 6 remove chicken from pan, set aside.
  • 7 add picante sauce and remaining 2 t. butter.
  • 8 saute for about 3 minutes stirring constantly to remove some of the "raw" flavor of the picante.
  • 9 return chicken to skillet.
  • 10 add broth and parsely, stir, cover turning chicken about every 5 minutes.
  • 11 when chicken is done, remove lid continuing to cook liquid back to the consistency of thicker picante sauce.
  • 12 remove chicken from skillet, let stand a few minutes to allow juices to redistribute, and top evenly with cheddar.
  • 13 serve over or brown rice.

Momma Pauline's Baked Mac And Cheese

Ingredients

  • Servings: 6
  • 3 (10 3/4 ounce) cans condensed tomato soup (campbells gives best flavor)
  • 21 1/2 ounces whole milk (or two soup cans)
  • 2 lbs ziti pasta
  • 24 slices processed cheese, 8 reserved (kraft deli slices work best)
  • 1 teaspoon garlic powder
  • 2 -3 teaspoons black pepper (enough to cover top)
  • 3 tablespoons paprika

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 cook pasta until just al dente. it will continue to cook in the oven.
  • 3 while pasta is cooking, empty soup into a medium sized sauce pan and use a rubber spatula to get all the soup out then add two soup cans of milk to the soup.
  • 4 over medium to medium low heat blend the soup and milk. i use one of the attachments from a hand mixer rolling it back and forth in my palms. it works well and gets it done quickly.
  • 5 rip 16 slices of the cheese into small pieces dropping them into the soup as you go stirring often.
  • 6 as cheese begins to melt add the garlic powder and cover the entire top of the mixture with the black pepper and continue to stir until cheese is fully melted.
  • 7 in a roasting pan, roughly 15x12 (i use the throwaway foil kind) add half of the ziti then half of the cheese sauce and mix thoroughly.
  • 8 add the remaining ziti then sauce and mix thoroughly again.
  • 9 lay the remaining 8 slices of cheese on the top of the ziti and paprika the top of the mixture.
  • 10 cover tightly with foil and bake for 45 minutes.
  • 11 let sit 15 minutes before serving.

Luscious Lemon Rice

  • 3 add sauce and salmon to pasta and add water if needed. add pepper to taste.

  • 230 g hazelnuts
  • 1/4 cup olive oil
  • 1 red onion, chopped
  • 1 fennel, chopped
  • 3 garlic cloves, chopped
  • 1 orange
  • 2 tablespoons paprika
  • 1 1/2 cups quinoa
  • 3 cups vegetable broth or 3 cups water
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon pepper
  • 150 g raisins

Recipe

  • 1 to chop the fennel, remove the leaves (you will use them later) and chop the bulb. you can also chop up the stalks, or just munch on them as you cook ;) grate the orange for zest, but keep the flesh and tear it up into small pieces, removing the ' bits' where possible.
  • 2 toast hazelnuts if they are raw - heat them in a pan over medium heat stirring constantly until they start to smell nutty, about 5 minutes. (you can also bake them on a baking sheet for 5 minutes at 250f if you prefer). immediately remove from pan once they are toasted to prevent burning. remove their skins and coarsely chop them.
  • 3 heat the oil in a large pot over a medium-high heat, and add the onion and fennel. saute until soft, and then make a well in the middle. add garlic, paprika and zest. saute them for a minute in the well, then mix them into the onion and fennel. continue stirring over heat for five minutes, or until well mixed and aromatic.
  • 4 add the quinoa to the pot and stir it until coated and slightly toasted, about a minute. add 1 cup of liquid, bring it to boil and then reduce to simmer. add the raisins, salt and pepper. when the quinoa has absorbed the water (about 8 minutes), pour in the other cup of liquid, bring to boil, reduce to simmer and again cook it for about 8 minutes, or until the water is absorbed.
  • 5 take the pot off the heat and stir in the hazelnut pieces. cover and let sit for five minutes. garnish with fresh fennel and orange. serve immediately.

Recipe

  • 1 toss the carrots with the lemon juice, 1/4 teaspoons each cumin and salt, and a few grinds of black pepper in a bowl; set aside.
  • 2 heat the olive oil in a medium saucepan over medium-high heat. add the onion and cook, stirring often, until deep golden brown, about 12 minutes. using a slotted spoon, remove about half of the onion to a paper towel-lined plate; set aside.
  • 3 add the garlic, cinnamon, cayenne and the remaining 1 3/4 teaspoons cumin to the pan with the remaining onion. cook, stirring, 1 minute. stir in the rice and 3/4 teaspoons salt. add 2 1/2 cups water and bring to a boil. reduce the heat to low, cover and cook until the rice is tender and the water is absorbed, about 18 minutes.
  • 4 stir the lentils into the rice. serve topped with the reserved carrot mixture and onion, the yogurt and cilantro.

Picadillo Dinner

Picante Black Beans And Rice

  • 1/2 cup onion, finely diced
  • 1/2 cup chorizo sausage, dry-cured, finely diced

  • 1 (796 ml) can diced tomatoes
  • 2 cups chicken broth, 30% less sodium
  • 1 (540 ml) can black beans, rinsed and well drained
  • 1 cup fresh corn kernels, about 1 cob (uncooked)

Recipe

  • 1 heat oil in large saucepan over medium-high heat. sauté onion and chorizo until onion has softened, 2-3 minutes. add garlic and rice, stirrirng to coat rice in oil. stir in tomatoes and broth and bring to a boil. reduce heat, cover and simmer until all the liquid is absorbed, about 15 minutes.
  • 2 remove from heat; gently stir in black beans and corn. cover and let stand 5 minutes. garnish with green onions.

  • 1 medium onion, chopped
  • 1 garlic clove, crushed
  • 1/2 green pepper, chopped
  • 1 lb lean ground beef
  • 15 ounces tomato sauce

  • 1 tablespoon capers
  • 2 tablespoons worcestershire sauce
  • 2 tablespoons vinegar

Recipe

  • 1 heat oil in a frying pan and add onions.
  • 2 saute until onions are golden but not black, about 10 minutes.
  • 3 add the garlic and green pepper and gently sauté 5 minutes.
  • 4 add the beef and break up into small pieces as it browns. (drain if there is excess fat.)
  • 5 add the tomato sauce and mix well.
  • 6 add the rest of the ingredients and cook gently, stirring occasionally, until the flavors have blended, about 15 minutes.
  • 7 for a traditional cuban dish, serve this over yellow rice.

' Meatballs' & Pasta With Grilled Onions & Tomato Sauce

Recipe

  • 1 cut each burger into 6 equal pieces.
  • 2 heat oil in large nonstick skillet over medium heat; add burger pieces, onions and tomatoes.

  • 4 stir in basil, salt and pepper.
  • 5 set aside.
  • 6 meanwhile, cook pasta according to package directions; drain and return to pot.

Peanut Butter And Butterscotch Rice Krispies Squares

  • 1 cup sugar
  • 1 cup peanut butter
  • 6 cups rice krispies
  • 1 cup chocolate chips
  • 1 cup butterscotch chips

Recipe

  • 1 cook syrup and sugar on low heat until it comes to a boil.
  • 2 remove and add peanut butter and cereal.
  • 3 press into a buttered 13 x 9-inch pan and let harden.
  • 4 melt chocolate chips and butterscotch chips in top of double boiler (use hot water rather than boiling).
  • 5 stir to blend.
  • 6 spread over the rice mixture and chill for 5 minutes before cutting to desired size.

Middle Eastern Tahini Oatmeal (vegan)

Lentil And Cauliflower Stew

  • 1 cup long-grain rice
  • 3/4 teaspoon salt
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 4 garlic cloves, minced
  • 2 carrots, thinly sliced
  • 1 cup lentils, rinsed and picked over
  • 3/4 lb plum tomatoes, coarsely chopped or 1 1/2 cups canned tomatoes, with their juices
  • 2 cups vegetable broth
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground coriander
  • 1/8 teaspoon ground allspice
  • 4 cups cauliflower florets
  • 1 cup plain nonfat yogurt

Recipe

  • 1 in a medium saucepan, bring 2 1/4 cups of water to a boil. add the rice and 1/4 teaspoon of the salt, reduce to a simmer, cover and cook until the rice is tender about 17 minutes.
  • 2 meanwhile, in a large nonstick saucepan, heat the oil. add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 7 minutes. add the carrots and cook, stirring occasionally, until the carrots are crisp tender, about 4 minutes.
  • 3 add the lentils to the pan, stirring to coat. add the tomatoes, broth, ginger, coriander, allspice, and the remaining salt and bring to a boil. reduce to a simmer, cover, and cook until the lentils have begun to soften, about 10 minutes. stir in the cauliflower, cover, and cook until the lentils and cauliflower are tender, about 10 minutes.
  • 4 serve lentils and cauliflower stew over rice with a dollop of yogurt.

New England Brown-bread Griddle Cakes

  • 3/4 cup unbleached all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup rye flour
  • 1/2 cup stone-ground cornmeal
  • 2 tablespoons packed dark brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons unsalted butter, melted
  • 2 large eggs, separated
  • 1 1/2 cups milk
  • vegetable oil (for panfrying)
  • bacon drippings (optional) or sausage drippings (optional)
  • unsalted butter, softened
  • 1/2 cup raisins
  • 1/2 cup dark rum
  • 1/4 cup light corn syrup
  • 1/4 cup packed light brown sugar or 1/4 cup dark brown sugar
  • ground allspice (a pinch) or freshly grated nutmeg (a pinch)

Recipe

  • 1 to make the syrup: (sterilize 2 half-pint canning jars unless you intend to use all the syrup immediately); combine the raisins and rum in a medium saucepan; let sit for 10-15 minutes; stir in ¾ cup water and the remaining ingredients; bring to a boil over high heat.
  • 2 decrease the heat to a simmer; cook for about 5 minutes, until melded into a thin sauce; use syrup immediately or pour into jars, cover, cool, and refrigerate; the syrup keeps for weeks.
  • 3 to make the griddle cakes: in a mixing bowl, stir the flours, cornmeal, brown sugar, baking powder, and salt together (it is recommended to use a bowl with a pouring spout).
  • 4 scrape in the melted butter; stir until the butter disappears into the dry ingredients.
  • 5 in another bowl, beat the egg whites until soft peaks form; set aside.
  • 6 in another bowl, whisk together the egg yolks with the milk until frothy.
  • 7 pour egg yolk mixture into the dry ingredients; mix until well combined; fold in the egg whites.

  • 10 pour or spoon out the batter onto the hot griddle, where it should sizzle and hiss ( a generous 3 tablespoons of batter will make a 4-inch pancake); make as many cakes as you can fit without crowding.
  • 11 cook the pancakes until their top surface is covered with tiny bubbles but before all the bubbles pop (1-2 minutes).
  • 12 flip the pancakes and cook until the second side is golden brown (1-2 minutes).
  • 13 repeat with the remaining batter, adding to the griddle as needed a bit more oil and bacon drippings if desired.
  • 14 serve immediately with butter and syrup.

Momma's Texas Hash

  • 1 brown and drain hamburger and onion.
  • 2 in a pot, add hamburger, onion, and tomatoes.
  • 3 put in some worcestershire sauce (1 - 2 tsp), chili powder, salt and pepper to taste. i just keep adding stuff until it tastes good.
  • 4 let simmer 20 minutes or so.
  • 5 note: it might take more tomatoes, so i'd buy an extra can, i never make a small batch of this stuff. we have it and freeze the leftovers for the next week. serve over rice.

Picadillo With Corn

  • 1 1/2 cups potatoes, chop in 1/2 inch cubes
  • 1 cup onion, chopped (i use yellow onions)
  • 1 (15 1/4 ounce) can whole kernel corn
  • 2 tablespoons chicken bouillon or 2 tablespoons beef bouillon
  • 1/3 cup salt-free tomato sauce
  • 1 cup water

Recipe

  • 1 in a deep skillet brown ground beef. (or boil it to easily remove the extra fat it releases when its drained.).
  • 2 add the chopped onions to the beef (after drained) and saute them so the edges are transparent on the onions.
  • 3 add the water, tomatoe sauce, bouillion. here is where you taste test it. add more bouillion and tomatoes sauce to taste.
  • 4 add the potatoes and corn mix well and cover. stir contents to assure they dotn stick to the pan. add more water if it evaporates too fast.
  • 5 once the potatoes are cooked through its done. enjoy with rice on the side if you like or as a one dish meal.

Old Mother Hubbard Weiner Casserole

  • 6 hot dogs
  • 1 (10 ounce) can chicken noodle soup
  • 15 ounces water

  • 1/2 cup grated cheddar cheese

Recipe

  • 1 slice weiners into pieces and add all ingredients except the cheese to a 2 quart casserole dish, and mix well.
  • 2 cook in microwave until liquid is absorbed (approx 15 minutes or so).
  • 3 top with cheese and microwave it again until cheese is melted, or pop it into the oven if you want the cheese to be a little more crusty.

Mona's Onion Casserole

  • 6 cups chicken broth (made from a stock cube is ok)
  • 1/3 cup basmati rice, uncooked
  • 1 red pepper, finely chopped
  • 1 cup frozen chopped spinach
  • 1 chicken breast, cubed
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 3 eggs
  • 3 tablespoons lemon juice
  • 1 tablespoon fresh grated ginger
  • fresh ground black pepper

Recipe

  • 1 in a large saucepan, combine chicken broth and rice and bring to a boil.
  • 2 cook over a low heat for about 20 minutes or until the rice is tender.
  • 3 in the final minutes of cooking, reserve two cups of the broth and then add the spinach, chicken and red pepper.
  • 4 remove the soup from heat and cover while you make the thickener.
  • 5 in a small saucepan, melt butter and stir in flour until smooth.
  • 6 gradually add the reserved broth and cook until slightly thickened, stirring constantly.
  • 7 in a small bowl, beat the eggs until frothy.
  • 8 gradually beat the thickened broth into the soup.
  • 9 then slowly add egg mixture to soup.
  • 10 heat gently until soup thickens enough to coat a spoon-- do not boil!
  • 11 mix in the ginger and lemon juice.
  • 12 add salt and pepper to taste, garnish with lemon and serve immediately.

Luxurious Turkey-mushroom Risotto With Truffle Oil

  • 3 tablespoons unsalted butter
  • 4 ounces mushrooms, wiped trimmed and sliced
  • 1/2 cup finely chopped onion
  • 1 cup arborio rice
  • 1/4 cup dry wine
  • 3 cups turkey or 3 cups chicken stock
  • 1/2 teaspoon salt (to taste)
  • 1 cup cooked turkey, diced
  • 1/4 cup grated parmigiano-reggiano cheese
  • 1/4 cup finely chopped flat leaf parsley
  • 1 tablespoon truffle oil
  • fresh ground black pepper, to taste

Recipe

  • 1 melt 2 t of the butter in a heavy medium-size casserole.
  • 2 add the onions and sauté over medium-high heat until golden.
  • 3 stir in the mushrooms and cook until tender, about 5 minutes.
  • 4 add the remaining butter and the rice, turning to coat the grains with butter.
  • 5 pour in the wine and cook over high heat until it has evaporated; reduce heat to medium.
  • 6 begin adding the hot stock in 1/2-portions.
  • 7 add the salt and cook, stirring frequently, until the liquid is absorbed before continuing with the next addition.
  • 8 when finished, the rice texture should be creamy and al dente.
  • 9 turn off the heat, stir in the turkey, cheese, parsley, truffle oil and black pepper.
  • 10 serve at once.
