Peanut Butter And Jelly Chicken For Oamc

Ingredients

  • Servings: 4
  • 1 lb boneless skinless chicken breast, cut into 1 pieces (cooked)
  • 12 ounces apricot jam
  • 1/4 cup creamy peanut butter
  • 1/3 cup orange juice
  • 1/3 cup apple juice
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons lemon juice
  • 4 garlic cloves, minced
  • 2 teaspoons salt
  • 2 teaspoons curry powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon ground cumin

Recipe

  • 1 combine all ingredients except chicken in a bowl and mix until smooth.
  • 2 add chicken and mix.
  • 3 pour into 1 gallon freezer bag and lay flat to freeze.
  • 4 to reheat preheat oven to 350°f pour thawed chicken mixture into a 2 quart casserole dish, and bake, uncovered for 20 to 30 minutes.
  • 5 serve over hot rice.
