Ingredients

- 1 lb boneless skinless chicken breast, cut into 1 pieces (cooked)
- 12 ounces apricot jam
- 1/4 cup creamy peanut butter
- 1/3 cup orange juice
- 1/3 cup apple juice
- 2 tablespoons balsamic vinegar
- 2 tablespoons lemon juice
- 4 garlic cloves, minced
- 2 teaspoons salt
- 2 teaspoons curry powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cardamom
- 1/2 teaspoon ground cumin
Recipe
- 1 combine all ingredients except chicken in a bowl and mix until smooth.
- 2 add chicken and mix.
- 3 pour into 1 gallon freezer bag and lay flat to freeze.
- 4 to reheat preheat oven to 350°f pour thawed chicken mixture into a 2 quart casserole dish, and bake, uncovered for 20 to 30 minutes.
- 5 serve over hot rice.
