Lemon Teriyaki Chicken (quick And Easy)

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 1 lb boneless skinless chicken breast (chopped)
  • 1/2 cup lemon juice
  • 1/2 cup soy sauce
  • 1/4 cup sugar
  • 3 tablespoons brown sugar
  • 2 tablespoons water
  • 4 minced garlic cloves
  • 3/4 teaspoon ground ginger

Recipe

  • 1 combine all ingredients, except the chicken, in a skillet.
  • 2 cook on high for 3-4 minutes on the stove.
  • 3 add the chicken.
  • 4 simmer for 30 minutes.
  • 5 serve over rice.

Meat Free Blt Spaghetti With Butter Lettuce, Leek & Tomato.

Ingredients

  • Servings: 4
  • 1 lb spaghetti
  • 2 heads boston lettuce, washed and dried
  • 1/2 cup parsley, fresh
  • 1/2 cup basil, fresh
  • 1/4 mint leaf, fresh
  • 1/4 pine nuts, toasted
  • 1 1/2 cups grated parmesan cheese
  • salt and pepper
  • zest of one lemon
  • juice of one lemon
  • 1/4-1/2 cup oil
  • 2 tablespoons oil
  • 3 leeks, washed, halved lengthwise and sliced into half moon shape
  • 4 garlic cloves, finely chopped
  • 1 pint grape tomatoes or 4 tomatoes, cut in small dice
  • 1/2 cup dry wine

Recipe

  • 1 bring large pot of water to a boil and add salt.
  • 2 in food processor, place parsley, basil, mint, nuts, one head of the lettuce and half the cheese.
  • 3 pulse until finely chopped. add enough oil until you get the consistency of pesto.
  • 4 set aside.
  • 5 cook spaghetti.
  • 6 while pasta is cooking,.
  • 7 in large frying pan over medium high heat, heat the oil.
  • 8 add the leeks and garlic.
  • 9 saute until just softened.
  • 10 add the wine, tomatoes and reduce by half.
  • 11 coarsely chop the second head of lettuce.
  • 12 when pasta has cooked, reserve 1 cup of cooking water.
  • 13 drain pasta and return to pot.
  • 14 add pesto, water, vegetable mixture along with lemon juice, some of the chopped lettuce.
  • 15 toss.
  • 16 season with salt and pepper as needed.
  • 17 devide into heated pasta bowls and top with remaining lettuce and cheese.
  • 18 serve immediately.

Knorr Wine Chicken

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 (1 1/2 ounce) package knorr vegetable soup mix
  • 1/2 cup wine
  • 1/2 cup sour cream
  • salt
  • pepper

Recipe

  • 1 cut chicken into bite sized pieces, lightly salt and pepper.
  • 2 add olive oil to sauce pan and cook chicken until juices run clear about 5 minutes. remove chicken from and set aside.
  • 3 add wine and soup mix to pan, stir until combined. let simmer for about a minute. (if you want more sauce you more wine and sour cream).
  • 4 add sour cream and mix thoroughly.
  • 5 add chicken back to pan and heat through.
  • 6 serve over rice or noodles.

Meat And Rice Roll

Ingredients

  • 1 lb lean ground meat
  • 1/2 lb breakfast sausage
  • 3/4 cup evaporated milk
  • 1/3 cup diced onion
  • 1/2 teaspoon pepper
  • 1 1/2 cups fresh breadcrumbs
  • 1 (6 ounce) box uncle ben's long grain and wild rice blend (or generic)
  • 10 1/2 ounces cream of mushroom soup
  • no stick aluminum foil
  • pepper

Recipe

  • 1 preheat oven to 350°f.
  • 2 make and wild rice.
  • 3 line a 9x13 baking sheet (with edges) with foil.
  • 4 mix lean ground meat, breakfast sausage, evaporated milk, onion, pepper, fresh bread crumbs (the mixture will be very sticky).
  • 5 spread the meat mixture flat in the baking sheet.
  • 6 spread 2 cups and wild rice over the meat leaving about an inch on the sides with out rice.
  • 7 on the long side, fold the inch without rice over and continue rolling (it should look like a log when finished).
  • 8 bake for 30 minutes.
  • 9 spread the can of cream of mushroom soup (undiluted) along the top of the roll, and sprinkle extra diced onion and black pepper on top.
  • 10 bake for another 30 minutes.
  • 11 let stand about 5 minutes before serving.

Meatless Stuffed Bell Peppers

Ingredients

  • Servings: 4
  • 6 medium green bell peppers
  • 2 cups cracked wheat, cooked
  • 1 cup rice, cooked
  • 1 1/2 cups grated monterey jack cheese
  • 3/4 cup plain yogurt or 3/4 cup sour cream
  • 2 eggs
  • 1/4 cup cilantro, chopped
  • 1/2-3/4 cup finely chopped onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons dry onion soup mix
  • 2 (14 ounce) cans diced tomatoes
  • 1 cup water
  • 1 tablespoon olive oil
  • 1/2 cup ketchup or 1/2 cup tomato paste
  • 1 medium onion, sliced
  • 1/2 cup cilantro, roughly chopped
  • 1 teaspoon agave syrup or 1 teaspoon sugar
  • 1/8 teaspoon cinnamon
  • grated cheese

Recipe

  • 1 cut the top rings off and seed each pepper, creating deep cups. coarsely dice the pepper rings. set aside separately.
  • 2 mix together the filling ingredients. set aside.
  • 3 in a pan large enough to hold the peppers, mix together the sauce ingredients. stir in the reserved diced pepper rings.
  • 4 lightly salt the insides of each pepper cup.
  • 5 stuff each cup with filling, standing each filled pepper on top of the sauce in the pan.
  • 6 carefully baste the sauce over the peppers.
  • 7 cover and bake 375°f for 45 minutes. check it a couple of times to be sure the sauce doesn't cook down too much. add a little water if necessary.
  • 8 after the 45 minutes, remove from oven and sprinkle grated cheese on each filled pepper.
  • 9 remove pan cover and continue baking about 20 minutes or 'til the sauce thickens and the cheese melts.
  • 10 let cool for at least 1/2 hour before serving.

  • 1 cup sun-dried tomato
  • 1 cup shiitake mushroom
  • 1 onion
  • 1 (16 ounce) jar alfredo sauce, i use the classico sun dried tomato
  • 1 cup chicken breast, chopped
  • 1 cup of shredded ham
  • 1 (16 ounce) box penne pasta, cooked
  • swiss cheese, italian blend, as much as you like
  • oregano
  • thyme
  • garlic

Recipe

  • 1 mix all ingredients together in a lightly greased 13 x 9 inch baking dish.
  • 2 bake at 375f until golden.

Our Iraqi "timman" -- Rice

Total Time: 40 mins Preparation Time: 5 mins Cook Time: 35 mins

Ingredients

  • Servings: 4
  • 3 cups basmati rice
  • 4 tablespoons vegetable oil
  • 1 tablespoon salt
  • 2 teaspoons turmeric
  • 2 1/2 cups water
  • 3 tablespoons dehydrated onion

Recipe

  • 1 1. dump oil into pot, heat on medium high.
  • 2 2. add dry rice, salt. saute about a minute or so. do not stir it after this point.
  • 3 3. add the water, and turmeric. as i said, no exact amount. fill the pot and cover the rice about 1/2" with the water.
  • 4 4. allow to come to a rapid boil, and then reduce the heat to medium/low (or about a 3).
  • 5 5. cover the pot, and do not open for at least 30 minutes.
  • 6 to serve, dump the pot upside down on a serving platter. the "hikaka" will be on the top of your rice. it's just crispy "over cooked" rice, but it's unbelieveably delicious :).

Pepperoncini (oil And Garlic Spaghetti)

Ingredients

  • Servings: 6
  • 1 lb spaghetti
  • 6 -8 garlic cloves, sliced fine not minced
  • 1/2 cup olive oil, i use flavored
  • 2 -3 tablespoons dried chilies (or if not red pepper flakes work fine)
  • salt, fresh ground pepper, herbs (to taste)
  • 1 cup water, from pasta pot

Recipe

  • 1 put pasta in pot to boil over high heat. i usually put in oil, some salt, and fresh herbs in mine. boil till tender, save 1 cup of the pasta water. drain pasta.
  • 2 heat skillet over medium-high heat. pour oil in skillet. when hot put garlic in it. swirl around till fragant, about 3-4 minute.
  • 3 add spices and pasta. add water, a little bit at a time, till pasta does not look dry but is not swimming in liquid either. add 1/4 cup at a time. toss to incorporate all together.
  • 4 enjoy!

Our Favorite Stuffed Green Peppers

Ingredients

  • 5 -6 medium green peppers
  • 3/4 cup whole grain brown rice, uncooked
  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 1 (8 ounce) can tomato sauce
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon beef bouillon
  • 1/8-1/4 teaspoon pepper
  • 1/2-1 cup cheddar cheese (optional)

Recipe

  • 1 remove tops and seeds from green peppers. in a large kettle with enough water to cover peppers, boil; then cook peppers 5 minutes. remove and drain. cook brown rice by package directions. in skillet, brown beef and onion; drain well. add tomato sauce, basil, oregano, thyme, salt, pepper, and beef bouillon. cook 5 minutes. stir in rice and cheese if desired. stuff peppers with mixture and top with cheese, if desired. place upright in shallow baking dish or casserole. bake at 375 f for 15-20 minutes.

Ingredients

  • 2 cups basmati rice
  • 2 tablespoons butter
  • 3/4 teaspoon salt

Recipe

  • 1 wash the rice in several changes of water & drain it.
  • 2 put it in a bowl with 5 cups of water and let soak for 30 minutes.
  • 3 drain it thoroughly & let it sit in the strainer for 10 minutes.
  • 4 melt butter in a heavy pot with a tight-fitting lid.
  • 5 add the drained rice.
  • 6 cook, stirring gently, over medium heat for about a minute, until all the grains are coated with butter.
  • 7 add 2 1/2 cups (1/2 litre) water & the salt.
  • 8 bring to a boil, cover, turn to very low & cook 20 minutes.
  • 9 turn off the flame & leave the pot, covered for another 10 minutes.

  • 1 mix raw ground beef, bread crumbs, milk, seasonings, and egg and form into small balls. bake on a cookie sheet at 350f for 10-15 minutes or until no longer pink inside. place meatballs in an 8×8 baking dish. mix soup and milk for gravy. pour over meatballs. bake covered at 350f for 30 minutes. uncover, and bake 10 minutes longer. serve meatballs and gravy over mashed potatoes or rice, if desired.

Plain Pizza Base

  • 4 cups plain flour
  • 2 teaspoons instant dry yeast
  • 1 cup water
  • 1 tablespoon olive oil
  • 1 teaspoon salt

Recipe

  • 1 find a deep and wide mixing bowl, [try not to do it on a flat surface such as counter top as it takes more time and can be quite messy. i usually use a wok as i have one:)] add in the flour.
  • 2 add in yeast and just mix it lightly with the flour.
  • 3 add in water. to be on the safe side, do not add all, always leave a little in the cup and add more if necessary. mix the mixture with hand until you knead it to a dough that does not stick to your hand.
  • 4 add the olive oil at this stage. you may substitute this with butter or margarine. it's to give the dough its nice golden brown colour when baked. knead it for a minute.
  • 5 add the salt. it should be 1 flat teaspoon not heap. knead it for 2 to 5 minutes.
  • 6 you may also add ingredients at this stage such as rosemary, basil, cajun spice, etc and made it your unique pizza base.
  • 7 divide and roll to your desired thickness and size. dust the working surface well with flour. cover the unused portion to avoid drying out. [if you want to save the dough, divide and roll it tight as a ball, the wrap it with clear plastic film. keep it in the freezer. i keep them for maximum 2 weeks. before using it, let it thaw for 30min to an hour, it might get a bit sticky as it has all those water condension. add a bit of flour and roll your dough.]
  • 8 preheat the oven to 250 degree celcius.
  • 9 add your favourite ingredients and put in the oven to bake at 220 degree celcius for 10 minutes.

Korean Pupu Chicken

Ingredients

  • Servings: 6
  • 4 -5 lbs chicken drummettes
  • 1 -2 cup flour (season with salt, if desired)
  • 1 cup kikkoman light soy sauce
  • 3/4 cup sugar
  • 2 garlic cloves, minced
  • 2 green onions, thinly sliced
  • 1 tablespoon rice wine vinegar
  • 1/2 tablespoon lemon juice
  • 1/8-1/4 teaspoon tabasco sauce

Recipe

  • 1 thoroughly blend all sauce ingredients in a medium-sized bowl until sugar is completely dissolved.
  • 2 pour into 8 x 8 inch or similar sized dish.
  • 3 set aside.
  • 4 prepare serving dish by placing a piece of paper towel in bottom.
  • 5 flour chicken, coating thoroughly.
  • 6 if chicken gets moist, flour again before frying.
  • 7 fry in hot oil over medium heat until golden brown and crisp, turning as necessary.
  • 8 remove from oil with tongs, allowing some excess to quickly drip back into pan.
  • 9 place chicken directly into the prepared sauce. let soak for 3-5 minutes, turning every couple minutes until chicken has been thoroughly saturated.
  • 10 remove from sauce, again with tongs, letting some of the excess sauce drip back into dish.
  • 11 place on paper towel lined dish.

Korean Dipping Sauce

  • 1 tablespoon hot pepper paste (optional)

  • 1 tablespoon green onion, finely chopped

Recipe

  • 1 combine all ingredients in a seal-able container (i use a glass jar) and let sit for at least 4 hours to allow the flavors to meld.
  • 2 store in refer for up to two weeks.

Recipe

  • 1 put the rice in your ricemaker ( or saucepan ) and rinse several times with cold water swishing gently with your hand to release excess starch. drain.
  • 2 add the 2 1/4 cups cold water to the ricemaker ( saucepan ) and the salt.
  • 3 turn the ricemaker on and leave until done. ( or bring the saucepan to a boil, cover and simmer on low for 20 mins ).

Poblano Lamb Stew

Ingredients

  • Servings: 6
  • 1 lb boneless lamb shoulder, cut into 1 inch cubes.
  • 1 tablespoon cooking oil
  • 1 lb whole tiny new potatoes, quartered
  • 2 medium onions, chopped
  • 2 fresh poblano peppers, seeded and cut into 1 inch pieces
  • 1 fresh jalapeno pepper, seeded and chopped
  • 4 cloves garlic, minced
  • 2 inches cinnamon sticks
  • 3 cups chicken broth
  • 1 (14 1/2 ounce) can diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon dried oregano
  • 1/4 teaspoon ground black pepper
  • 1/4 cup snipped fresh cilantro or 1/4 cup parsley
  • hot cooked rice

Recipe

  • 1 in a big skillet, brown the lamb in hot oil (do this in batches if necessary); drain well.
  • 2 add the potatoes, onions, poblano peppers, jalapeno pepper, garlic, and stick cinnamon to a 4 quart slow-cooker.
  • 3 add the meat.
  • 4 in a mixing bowl, combine the chicken broth, undrained tomatoes, chili powder, oregano, and black pepper; pour over ingredients in the slow-cooker.
  • 5 cover and cook on low for 8-10 hours.
  • 6 discard cinnamon stick.

  • 8 adjust seasoning to taste, if necessary.

  • 3 cups long grain rice
  • 6 cups water
  • 2 tablespoons butter (optional)

Recipe

  • 1 place three cups uncooked rice in a large microwave safe bowl. using cold water, rinse the rice until the water runs clear.
  • 2 i use a small spoon to swirl the rice in the water. once the water is clear, drain the rice.
  • 3 add 6 cups fresh water to the rice, and the butter if using. add any additional seasonings of your choice.
  • 4 microwave uncovered full power(100%) for 15 minutes. do not remove bowl from oven. microwave uncovered at 50% power an additional 20 minutes.
  • 5 remove bowl from oven. cover and let stand an additional 5 minutes. fluff with a fork.

Pepperoni And Pasta Alfredo

  • 8 ounces bow tie pasta
  • 1 small onion, chopped fine
  • 2 celery ribs, chopped fine
  • 1 small red bell pepper, chopped fine
  • 1 small yellow bell pepper, chopped fine
  • 1 small green bell pepper, chopped fine
  • 2 garlic cloves, minced
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 12 ounces button mushrooms, sliced about 1/4-inch thick
  • 4 ounces frozen green peas
  • 1/4 cup wine
  • 1 teaspoon worcestershire sauce
  • 40 slices pepperoni, cut into quarters
  • 1 (1 5/8 ounce) package knorr alfredo sauce mix
  • 1 1/2 cups milk
  • 1 tablespoon butter
  • 4 ounces grated mozzarella cheese
  • 1 tablespoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • salt and pepper
  • 1/8 teaspoon cayenne pepper
  • 3 tablespoons milk, if needed or 3 tablespoons half-and-half cream, for thinning if needed

  • 1 preheat oven to 350 degrees.
  • 2 in large dutch oven heat olive oil & 2 tbsp butter over medium heat.
  • 3 add mushrooms, onion, celery, green pepper, yellow pepper, red bell pepper and garlic.
  • 4 saute on medium heat about 30 minutes or until vegetables are soft and transparent and mushroom are cooked through.
  • 5 add salt and pepper to taste and cayenne pepper.
  • 6 add wine, worchestershire sauce and pepperoni and saute for approximately 15 minutes.

  • 8 remove from heat and set aside.
  • 9 cook pasta just to al dente stage then drain and set aside.
  • 10 prepare sauce mix with milk and butter according to package directions.

  • 12 add mozzarella cheese to sauce mix and stir well until cheese is melted.
  • 13 toss pasta in reserved vegetable mixture in dutch oven, being careful not to break up pasta.
  • 14 add cream sauce to pasta mixture and stir until pasta is coated again being careful not to break up pasta.
  • 15 if more sauce is needed add 3 tbsp milk or heavy cream.
  • 16 pour into 9x13 baking dish and top with grated parmesean cheese.
  • 17 bake covered at 350 degrees for 30 minutes or until cheese is melted and bubbly around sides.

No Bake Yummy Chocolate & Peanut Butter Pizza - Kids Fun!

  • 1 cup creamy peanut butter
  • 1 cup butter, melted
  • 1 1/2 cups graham cracker crumbs
  • 2 cups confectioners' sugar

  • 1 (8 ounce) can tomato sauce
  • 1 (1 1/4 ounce) package taco seasoning
  • 1 cup canned corn, drained
  • 1/2 cup finely chopped green bell pepper

  • 1/8 teaspoon garlic powder
  • 1 cup brown rice, uncooked

Recipe

  • 1 in a medium saucepan, combine all ingredients except rice.
  • 2 bring mixture to a boil over medium heat. stir in rice. when mixture boils again, stir, then reduce heat to medium-low, cover and simmer, until most of the liquid has cooked out, 45 minutes to 1 hour.
  • 3 remove from heat and set aside covered, for 5 minutes.

  • 3 medium green peppers
  • 1 teaspoon sugar
  • 1/2 teaspoon basil
  • 1 (15 ounce) can tomato sauce
  • 3/4 lb ground beef
  • 1 small chopped onion
  • 2 1/2 cups minute rice
  • 1 teaspoon salt
  • 1/2 cup grated cheddar cheese
  • 2 cups water

Recipe

  • 1 cut peppers cut in half lengthwise, remove and discard stem ends and seeds.
  • 2 parboil in boiling salted water for 10 minutes drain and set aside.
  • 3 in a small sauce pan add tomato sauce, sugar and basil, and set aside.
  • 4 brown ground been and onion well in a large skillet.
  • 5 stir in 1/2 cup of tomato sauce, 1/4 cup of rice, and 1/2 teaspoon of salt.

Poblano And Cheddar Stuffed Portobello Mushrooms

  • 1 light a grill or preheat the broiler. roast the poblanos over the grill or under the broiler, turning, until blackened, about 3-4 minutes. transfer the chiles to a bowl and cover with plastic wrap until they cool. peel, core and seed the poblanos then finely chop them.
  • 2 brush the portobello mushrooms with 3 tablespoons of the olive oil and season with salt and pepper. grill or broil the mushrooms over high heat, turning, until softened, about 10-12 minutes. transfer the mushrooms to a plate, stem side down, to let them drain and cool.
  • 3 meanwhile, in a medium skillet, heat the remaining teaspoon of olive oil and add the onion. cook over moderate heat until softened, about 6 minutes. add the baby spinach and cook until the leaves wilt, about 1 minute. transfer the spinach to a sieve and press out the liquid.
  • 4 in a bowl, mix the spinach with the rice, cheese, cilantro and poblanos and season with salt and pepper.

  • 1 the grains need to equal 1 cup, so i used heaping tablespoons. the flaxseeds are in addition to the 1 cup. you can use any dried fruit and nuts you like and any combination of grains as long as the grain to water ratio is 1:3. next time i make it, i think i'm going to try adding brown rice and quinoa into the mix. i'm also thinking of grinding the grains in the blender to make more of a creamy cereal, but i honestly don't know it that will work or not.
  • 2 boil water. stir in grains and flaxseeds. cover and simmer for 25 minutes, stirring occasionally. stir in fruit and nuts. cover and continue to cook for 15 minutes. serve with a little soy milk and your good to go! store leftovers in the fridge.

Poblano Peppers Rice

  • 2 put oil on your hands and peel the poblano peppers. with a thin knife carefully opened vertically and cut the base of the seeds, remove seeds and wash if necessary.
  • 3 fill poblano peppers with cheese.

  • 1 cook pasta according to package directions.
  • 2 meanwhile add 1 tbsp of olive oil to a skillet and cook peppers and tomato until tender or al dente depending on your preference and set aside.

  • 4 in a small skilliet heat olive oil over medium heat add crushed garlic and fry until the garlic is just golden -- note its important not to over cook the garlic or get the oil too hot as everything will taste burnt.

  • 2 mix cottage cheese, oregano, basil and egg. set aside.
  • 3 in a deep saucepan, over medium heat, add butter and olive oil. add onions, peppers, chopped parsley and cook a few minutes until soft. add ground beef, break apart beef so that its very small and mix up. add garlic. cook a few minutes until the meat is completely browned. add spaghetti sauce and tomatoes. cook a few minutes more until bubbly. sprinkle liberally with salt and pepper.(note: if you use extra lean ground beef then there is no reason the drain). turn off heat and set aside.
  • 4 assemble lasagna: spray deep 9 x 13 pan with pam. put 3/4 cup sauce on the bottom of the pan. put 3 noodle over ( don't have them touch each other or the sides. apply 1/4 sauce over, 1/4 of cottage cheese mixture 1/4 of mozzarella and 1/3 of parmesan. do this 2x more .and end with last 1/4 of items. pour beef broth over.

  • 1 onion, chopped

  • 3 tablespoons flour (i use wondra, it helps!)
  • 2 -3 cups milk
  • 2 teaspoons cumin
  • 2 teaspoons celery seeds
  • 1 tablespoon mustard (deli style, brown, or seeded, i don't think plain yellow or dijon would be good.)
  • salt
  • pepper
  • 14 ounces tuna, drained
  • 1 1/2 cups grated cheddar cheese
  • 1 cup frozen baby peas
  • 1 cup dry breadcrumbs

Recipe

  • 1 prepare pasta according to package directions. cook firm, not soft. drain and set aside.
  • 2 meanwhile, heat olive oil in saucepan over medium heat. add onions and celery and saute until translucent, about 8 minutes.
  • 3 sprinkle flour over sauteed vegetables. stir well, cook, stirring frequently, over medium-low heat for two minutes, until flour looses "powdery" taste. do not brown.
  • 4 slowly, a 1/4 cup or so at a time, add milk, stirring well after each addition. add cumin, celery seed, mustard, salt and pepper (there--you've made cream of onion/celery soup).

  • 1 preheat the oven to 200 degrees celcius. heat 1 tbsp of the oil in a large frying pan, add the asparagus and fry for 3-4 minutes until browned. sprinkle over the paprika. transfer to a shallow ovenproof dish using a slotted spoon.
  • 2 add the remaining oil to the frying pan and fry the onion and garlic for 4-5 minutes, stirring occasionally. add the tomatoes, red chili pepper and sugar. season with salt and pepper and cook for 2 minutes. spoon over the top of the asparagus and put on the bottom shelf of the oven.
  • 3 put the risotto rice into a non-stick roasting tin, cover with the boiling water and stir in the saffron. cover with foil and place in the oven on the shelf above the asparagus. cook for 20-25 minutes until the rice is just cooked and the asparagus is tender.
  • 4 fluff up the rice with a fork and spoon onto warmed individual plates. spoon over the asparagus and tomatoes and garnish with the basil leaves.

Plain But Perfect-every-time Brown Rice

  • 1 bring water to a boil.
  • 2 once water is boiling, add brown rice, cover, and reduce to simmer.

  • 2 lbs skinless chicken thighs (6-7 pieces)

  • 2 cups yellow rice

  • 1 tablespoon dried parsley
  • 3 dashes ground black pepper
  • 14 manicotti, uncooked
  • 1 (15 ounce) can diced tomatoes
  • 1 (6 ounce) can tomato paste
  • 3/4 cup water
  • 1 tablespoon onion flakes
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon dried oregano
  • 1 teaspoon sugar
  • 3 dashes salt
  • 3 dashes ground black pepper

Recipe

  • 1 preheat oven to 400°f.
  • 2 combine ricotta, 4 oz mozzarella, parmesan, 1 tsp sugar, egg, nutmeg, parsley, salt and pepper.
  • 3 stuff uncooked manicotti generously with cheese mixture, from both ends. (tip: i put mixture in a plastic bag and cut off a small corner to squeeze the mixture in the shells easily).
  • 4 arrange manicotti in a single layer in a slightly greased 13 x 9 inch baking dish.
  • 5 combine diced tomatoes, tomato paste, water, onion flakes, basil, rosemary, oregano, sugar, salt and pepper in a small or medium sauce pan and bring to just a boil.
  • 6 pour sauce over manicotti covering completely.
  • 7 cover baking dish with aluminum foil, crimping edges to seal tightly.
  • 8 bake for 40 minutes at 400°f.
  • 9 remove foil, sprinkle generously with remaining mozzarella.
  • 10 bake uncovered for 5 minutes or until cheese is melted.

Recipe

  • 1 preheat your oven to 400°f.
  • 2 to make the cauliflower rice, pulse batches of raw cauliflower florets in a food processor, until a rice-like texture is achieved.
  • 3 fill a large pot with about an inch of water, and bring it to a boil. add the “rice” and cover; let it cook for about 4-5 minutes. drain into a fine-mesh strainer.
  • 4 this is the secret: once you’ve strained the rice, transfer it to a clean, thin dishtowel. wrap up the steamed rice in the dishtowel, twist it up, then squeeze all the excess moisture out! it’s amazing how much extra liquid will be released, which will leave you with a nice and dry pizza crust.
  • 5 in a large bowl, mix up your strained rice, beaten egg, goat cheese, and spices. (don’t be afraid to use your hands! you want it very well mixed.) it won’t be like any pizza dough you’ve ever worked with, but don’t worry– it’ll hold together!
  • 6 press the dough out onto a baking sheet lined with parchment paper. (it’s important that it’s lined with parchment paper, or it will stick.) keep the dough about ?” thick, and make the edges a little higher for a “crust” effect, if you like.

  • 1 1.in a medium saucepan, combine the brown sugar with the honey and butter. bring the mixture to a boil over medium-high heat, then lower the heat to medium-low and simmer until the sugar dissolves, about 2 minutes. remove the saucepan from the heat.

  • 3 large plantains, ripe but firm
  • 1 teaspoon salt
  • 1 large egg
  • 4 pieces boneless skinless chicken breasts (about 8 ounces each)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large bay leaf
  • 3 tablespoons butter
  • 1 cup water
  • 1 small onion, chopped small
  • 8 ounces frozen mixed vegetables (cauliflower, broccoli, peas, carrots, corn, green beans, brussels sprouts or your own preferred comb)

Recipe

  • 1 peel plantain and cut in half lengthwise.
  • 2 remove vein and discard.
  • 3 in a large saucepan, add cut plantains; cover with water and bring to boil.
  • 4 add salt, cover and continue to cook for about 3 minutes or until done.
  • 5 to test for doneness, insert a fork into the plantain and it should penetrate easily.
  • 6 remove plantain into a large mixing bowl.
  • 7 mash plantain.
  • 8 add egg and mix thoroughly until well blended.
  • 9 preheat oven to 350 degrees f.
  • 10 prepare a cookie sheet by lining with 2 pieces of parchment paper.
  • 11 spread the plantain mixture over the entire area of the cookie sheet until about 1/4 inch thick; set aside.
  • 12 in a large frying pan add chicken, sprinkle with salt and pepper.
  • 13 add bay leaf, butter and water and bring to boil.
  • 14 reduce heat to medium; cover, but leave a slight opening for steam to escape.

  • 16 add onion and continue to cook for another 10 to 12 minutes or until chicken is cooked through.
  • 17 add additional water if required while cooking, (do not let dry.).
  • 18 when chicken is done, remove and let cool for a few minutes in order to handle.
  • 19 shred chicken into a mixing bowl.
  • 20 remove bay leaf and discard.
  • 21 remove onions from frying pan with a slotted spoon and add to the chicken.
  • 22 make sure the onions are quite dry when adding to the shredded chicken.
  • 23 add mixed vegetables and mix well to blend.
  • 24 spoon mixture over the prepared plantain leaving about 3 inches from each end and 2 inches from the sides.
