Lemony Herbed Rice

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 7
  • 3 cups reduced-sodium chicken broth or 3 cups vegetable broth
  • 1 1/3 cups uncooked long grain rice
  • 1 (4 1/2 ounce) can chopped green chilies, drained
  • 3/4 teaspoon salt
  • 1 tablespoon minced fresh parsley
  • 1 tablespoon minced cilantro
  • 1 tablespoon minced chives
  • 1/2 teaspoon grated lemon peel
  • 1/4 teaspoon pepper

Recipe

  • 1 in a large saucepan, combine the broth, rice, chilies and salt; bring to a boil.
  • 2 reduce heat; cover and simmer for 15 - 20 minutes or until rice is tender.
  • 3 remove from the heat; let stand for 5 minutes.
  • 4 fluff with a fork and stir in the remaining ingredients.
