Miso Soup With Peas And Shiitakes

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 8 ounces shiitake mushrooms, chopped
  • 1 cup quinoa, rinsed
  • 6 cups chicken broth or 6 cups vegetable broth
  • 2 cups sugar snap peas, sliced
  • 3 tablespoons miso
  • 1 teaspoon rice vinegar
  • salt and pepper
  • 1/2 cup packed fresh basil leaf, thinly sliced

Recipe

  • 1 in a large pot combine mushrooms, quinoa and broth. bring to a boil. reduce heat and simmer, stirring occasionally, for 20 minutes.
  • 2 stir in peas, reduce heat and simmer, for 4-5 minutes or until tender.
  • 3 stir in miso and vinegar. stir in basil. season to taste with salt and pepper.
