Miso Butter Tofu

Ingredients

- 2 tablespoons miso
- 2 tablespoons warm water
- 1/2 cup chicken broth or 1/2 cup vegetable broth
- 2 tablespoons rice vinegar
- 2 teaspoons soy sauce
- 1 minced scallion ( and light green portions only)
- 1 tablespoon butter (optional)
- 1 (14 ounce) container firm tofu, drained
Recipe
- 1 preheat over to 400*.
- 2 combine vinegar, soy sauce, water & scallions.
- 3 cut tofu crosswise into 12 slices and arrange in a single layer in a baking dish.
- 4 pour soy sauce mixture over tofu; tilt dish so that all of the tofu is coated.
- 5 dot with 1 tbsp butter that is cut into small pieces (optional step).
- 6 bake until liquid evaporated completely and tofu is brown for about 50 to 55 minutes (note, the pan will look bruned around the enges).
- 7 let tofu cool before serving.
