Nina Y's Carrot Soup

Ingredients
- Servings: 4
- 2 lbs carrots, peeled and cut into chunks
- 1 medium onion, thinly sliced
- 2 garlic cloves, chopped
- 3 tablespoons rice, uncooked
- 3 tablespoons tomato paste
- 5 cups chicken broth or 5 cups stock
- 1/4 cup butter
- 1/2 teaspoon ground ginger
- salt or pepper
- milk or cream
Recipe
- 1 in large pot, carmelize onions in butter.
- 2 add garlic and carrots.
- 3 saute for a couple of minutes.
- 4 add chicken broth/stock, rice, tomato paste, ginger, and salt and pepper.
- 5 bring to a boil, then cover and simmer for 30 minutes.
- 6 puree in either blender, in batches or use an immersion blender.
- 7 add milk/cream, if desired, to taste.
