Mediterranean Tuna Pasta Salad

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 2 tablespoons lemon juice
  • 1/4 cup red wine vinegar
  • 2 tablespoons light olive oil
  • 1 teaspoon sugar
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon fresh coarse ground black pepper
  • 2 cups uncooked medium pasta shells
  • 1 small cucumber, scored and sliced (1 cup)
  • 1/2 small red onion, sliced into thin wedges
  • 1 cup grape tomatoes, halved
  • 10 pitted kalamata olives, coarsely chopped
  • 5 cups mixed salad greens
  • 1 (12 ounce) can solid albacore tuna in water, drained and flaked
  • 1/2 cup feta cheese, crumbled

Recipe

  • 1 whisk dressing ingredients together in a small bowl. set aside.
  • 2 cook pasta according to package directions. drain and rinse under cold running water. drain again.
  • 3 place pasta in a large bowl. add vegetables, olives, salad greens and tuna. pour on vinaigrette, toss to coat.
  • 4 sprinkle with feta cheese.
