Mediterranean Tuna Pasta Salad

Ingredients

- 2 tablespoons lemon juice
- 1/4 cup red wine vinegar
- 2 tablespoons light olive oil
- 1 teaspoon sugar
- 1/4 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/8 teaspoon fresh coarse ground black pepper
- 2 cups uncooked medium pasta shells
- 1 small cucumber, scored and sliced (1 cup)
- 1/2 small red onion, sliced into thin wedges
- 1 cup grape tomatoes, halved
- 10 pitted kalamata olives, coarsely chopped
- 5 cups mixed salad greens
- 1 (12 ounce) can solid albacore tuna in water, drained and flaked
- 1/2 cup feta cheese, crumbled
Recipe
- 1 whisk dressing ingredients together in a small bowl. set aside.
- 2 cook pasta according to package directions. drain and rinse under cold running water. drain again.
- 3 place pasta in a large bowl. add vegetables, olives, salad greens and tuna. pour on vinaigrette, toss to coat.
- 4 sprinkle with feta cheese.
