Meatless Bowtie Pasta With Mushrooms & Feta Cheese

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 12 ounces of bowtie pasta
  • 1 medium onion
  • 6 ounces sliced mushrooms
  • 4 ounces of sliced olives
  • 5 ounces reduced fat feta cheese
  • 3 tablespoons parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon minced garlic
  • 1/4 cup sundried tomato
  • salt or low sodium seasoning
  • pepper

Recipe

  • 1 cook pasta according to package directions.
  • 2 meanwhile, slice onion and saute in olive oil , season with pepper and salt.
  • 3 when onions are soft and carmelized remove from frying pan to bowl.
  • 4 saute washed mushrooms in 1 tablespoon butter or buttery spread.
  • 5 when mushrooms are sauted ,add onions back to pan and add sun dried tomatoes , feta cheese , olives , and garlic.
  • 6 mix well and keep warm while pasta finishes cooking.
  • 7 when pasta is finished , drain and put in large bowl.
  • 8 add 1 tablespoon butter to pasta and toss , add contents of frying pan.
  • 9 mix well.
  • 10 sprinkle with parmesan cheese.
  • 11 serve.
