Lemon Rice

Ingredients

  • Servings: 2
  • 1 cup water
  • 1 teaspoon lemon zest, minced
  • 2 tablespoons fresh lemon juice
  • 1/2 cup long grain rice
  • salt & freshly ground black pepper

Recipe

  • 1 in a saucepan, bring water and lemon juice to a boil.
  • 2 stir in rice, cover, reduce heat, and simmer until the liquid is absorbed, about 20 minutes.
  • 3 stir in lemon zest; season with salt and pepper.
