Ingredients

- 455 g basmati rice
- 5 tablespoons vegetable oil
- 2 tablespoons mustard seeds
- 6 curry leaves
- 2 lemons, juice and zest of
- 1 bunch fresh cilantro
- salt and pepper
Recipe
- 1 cook rice in boiling water for 10 minutes and drain.
- 2 heat oil in a small frying pan.
- 3 add mustard seeds.
- 4 when seeds being to pop add curry leaves and lemon zest, cook for 1 minute.
- 5 add drained rice, lemon juice and cilantro.
- 6 serve piping hot with curry.
