Lemon Rice

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 455 g basmati rice
  • 5 tablespoons vegetable oil
  • 2 tablespoons mustard seeds
  • 6 curry leaves
  • 2 lemons, juice and zest of
  • 1 bunch fresh cilantro
  • salt and pepper

Recipe

  • 1 cook rice in boiling water for 10 minutes and drain.
  • 2 heat oil in a small frying pan.
  • 3 add mustard seeds.
  • 4 when seeds being to pop add curry leaves and lemon zest, cook for 1 minute.
  • 5 add drained rice, lemon juice and cilantro.
  • 6 serve piping hot with curry.
