Orzo With Parmesan And Basil

Ingredients

- 3 tablespoons butter
- 1 1/2 cups orzo pasta
- 3 cups chicken broth
- 1/2 cup parmesan cheese
- 6 tablespoons basil, chopped (or 1-1/2 tsp dried)
- salt
- fresh ground pepper
Recipe
- 1 melt butter in skillet over medium high heat. add orzo and saute 2 minutes, until slightly brown.
- 2 add broth and bring to a boil. reduce heat, cover and simmer until orzo is tender and liquid is absorbed, about 20 minutes. mix in parmesan and basil. season with salt and pepper.
- 3 variation: for a creamier pasta dish, add 2 t plain yogurt or whipping cream to the dish.
