Mushroom Stroganoff

Total Time: 33 mins Preparation Time: 15 mins Cook Time: 18 mins

Ingredients

  • Servings: 4
  • 1 tablespoon butter
  • 2 cloves garlic, chopped
  • 1 large onion, thinly sliced
  • 2 lbs mushrooms, sliced
  • 1 tablespoon flour
  • 1/2 cup dry vermouth
  • 1 cup nonfat sour cream
  • 1/4 teaspoon nutmeg
  • 12 ounces linguine, freshly cooked

Recipe

  • 1 in a large saucepan over medium high heat, melt butter.
  • 2 add garlic and saute 30 seconds.
  • 3 add onion and saute 2 minutes.
  • 4 add mushrooms and saute until tender and most of the mushroom liquid has evaporated, about 10 minutes.
  • 5 reduce heat to medium, stir in flour and cook stirring 1 minute.
  • 6 add vermouth and cook until mixture thickens, stirring about 3 minutes.
  • 7 mix in sour cream and nutmeg.
  • 8 season with salt and pepper and add linguini.
  • 9 toss to blend.
