Mushroom Stroganoff

Ingredients
- Servings: 4
- 1 tablespoon butter
- 2 cloves garlic, chopped
- 1 large onion, thinly sliced
- 2 lbs mushrooms, sliced
- 1 tablespoon flour
- 1/2 cup dry vermouth
- 1 cup nonfat sour cream
- 1/4 teaspoon nutmeg
- 12 ounces linguine, freshly cooked
Recipe
- 1 in a large saucepan over medium high heat, melt butter.
- 2 add garlic and saute 30 seconds.
- 3 add onion and saute 2 minutes.
- 4 add mushrooms and saute until tender and most of the mushroom liquid has evaporated, about 10 minutes.
- 5 reduce heat to medium, stir in flour and cook stirring 1 minute.
- 6 add vermouth and cook until mixture thickens, stirring about 3 minutes.
- 7 mix in sour cream and nutmeg.
- 8 season with salt and pepper and add linguini.
- 9 toss to blend.
