Pineapple Rice Cream

Total Time: 51 mins Preparation Time: 1 min Cook Time: 50 mins

Ingredients

  • 2/3 cup short-grain rice
  • 5 cups milk
  • 2 teaspoons vanilla essence
  • 13 ounces crushed pineapple
  • 3/4 cup sugar
  • 2 1/2 cups cream (whipped)

Recipe

  • 1 rinse rice.
  • 2 bring milk to a boil in saucepan.
  • 3 add rice. when boiling, reduce heat and simmer (covered) on low heat 45-50 minutes, or til milk has been absorbed.
  • 4 remove from heat.
  • 5 add sugar and vanilla.
  • 6 allow to cool.
  • 7 when cold,fold in pineapple and whipped cream.
  • 8 refrigerate.
