Mexican Rice

Ingredients
- Servings: 4
- 1 cup long grain rice
- 1 tablespoon vegetable oil
- 1/2 onion, finely chopped
- 1 chicken bouillon cube
- 1/2 teaspoon cumin
- 1 garlic clove
- 1/2 bell pepper, chopped
- 1 jalapeno, chopped (optional)
- 1 tomato, chopped
- salt and pepper
- 1/2 cup fresh cilantro, chopped
Recipe
- 1 brown rice in oil for three minutes.
- 2 add chicken broth and bring to a boil.
- 3 add onion, bell pepper, jalapeño, and tomato.
- 4 add bullion cube, salt, pepper, cumin, cilantro and garlic.
- 5 boil.
- 6 cover and reduce heat to low.
- 7 cook 20 minutes.
