Mexican Rice

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 cup long grain rice
  • 1 tablespoon vegetable oil
  • 1/2 onion, finely chopped
  • 1 chicken bouillon cube
  • 1/2 teaspoon cumin
  • 1 garlic clove
  • 1/2 bell pepper, chopped
  • 1 jalapeno, chopped (optional)
  • 1 tomato, chopped
  • salt and pepper
  • 1/2 cup fresh cilantro, chopped

Recipe

  • 1 brown rice in oil for three minutes.
  • 2 add chicken broth and bring to a boil.
  • 3 add onion, bell pepper, jalapeño, and tomato.
  • 4 add bullion cube, salt, pepper, cumin, cilantro and garlic.
  • 5 boil.
  • 6 cover and reduce heat to low.
  • 7 cook 20 minutes.
