Mexican Rice (easy)

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 3 tablespoons vegetable oil
  • 1 cup uncooked long-grain rice
  • 2 teaspoons garlic salt
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon taco seasoning
  • 1/4 cup chopped onion
  • 1/2 cup tomato sauce
  • 2 cups chicken broth

Recipe

  • 1 heat oil in a large saucepan over medium heat.
  • 2 add rice and cook, stirring constantly.
  • 3 sprinkle with salt, cumin, and taco seasoning.
  • 4 cook stirring constantly, until slightly translucent (about 10 min).
  • 5 stir in onions and cook until tender.
  • 6 stir in tomato sauce and chicken broth; bring to a boil.
  • 7 reduce heat to low, cover and simmer for 20 to 25 minutes.
  • 8 fluff with a fork.
