Macaroni And Broccoli Platter

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 2 cups macaroni
  • 4 -5 medium broccoli florets
  • 1 medium red capsicum
  • 2 medium tomatoes
  • 1 cup skim milk
  • 1 tablespoon butter
  • 1 tablespoon cornstarch
  • 2 tablespoons tomato ketchup
  • salt
  • pepper powder
  • 2 tablespoons low-fat cheese

Recipe

  • 1 cook macaroni in plenty of boiling salted water for 10-12 minutes or until just tender.
  • 2 drain and rinse through with cold water.
  • 3 set aside.
  • 4 wash the broccoli and blanch in slightly salted water for half a minute.
  • 5 wash, halve and de-seed capsicum.
  • 6 chop finely.
  • 7 wash, peel and finely chop the tomatoes.
  • 8 melt butter in a non-stick pan.
  • 9 add cornstarch.
  • 10 as it begins to bubble, add milk in a slow trickle.
  • 11 stir continuously.
  • 12 cook on low heat till a smooth sauce is ready.
  • 13 add macaroni, broccoli, capsicum, tomatoes, ketchup, salt and pepper powder to taste.
  • 14 serve garnished with grated cheese.
