Macaroni And Broccoli Platter

Ingredients

- 2 cups macaroni
- 4 -5 medium broccoli florets
- 1 medium red capsicum
- 2 medium tomatoes
- 1 cup skim milk
- 1 tablespoon butter
- 1 tablespoon cornstarch
- 2 tablespoons tomato ketchup
- salt
- pepper powder
- 2 tablespoons low-fat cheese
Recipe
- 1 cook macaroni in plenty of boiling salted water for 10-12 minutes or until just tender.
- 2 drain and rinse through with cold water.
- 3 set aside.
- 4 wash the broccoli and blanch in slightly salted water for half a minute.
- 5 wash, halve and de-seed capsicum.
- 6 chop finely.
- 7 wash, peel and finely chop the tomatoes.
- 8 melt butter in a non-stick pan.
- 9 add cornstarch.
- 10 as it begins to bubble, add milk in a slow trickle.
- 11 stir continuously.
- 12 cook on low heat till a smooth sauce is ready.
- 13 add macaroni, broccoli, capsicum, tomatoes, ketchup, salt and pepper powder to taste.
- 14 serve garnished with grated cheese.
