Mexican Rice

Ingredients
- Servings: 4
- 1 medium sized onion
- 1 (14 ounce) can diced tomatoes
- 1 cup rice
- 1 tablespoon cumin
- 1 tablespoon garlic powder
- salt
- oil, to fry the rice
Recipe
- 1 heat oil in a nonstick pot (make sure you have a lid).
- 2 cut onions in big chunks.
- 3 add your onions and rice to the pan, salt the rice and cook until rice is browned.
- 4 in a separate med sized bowl add your tomatoes,2 1/2 cups of hot water and your seasonings stir to mix.
- 5 add to the hot pan.
- 6 do not stir.
- 7 let the rice boil about 10 to 15 minute.
- 8 cover with lid and turn off the heat.
- 9 let stand for about 45 minutes, then wa la you have delicious mexican rice!
