Mexican Rice

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 medium sized onion
  • 1 (14 ounce) can diced tomatoes
  • 1 cup rice
  • 1 tablespoon cumin
  • 1 tablespoon garlic powder
  • salt
  • oil, to fry the rice

Recipe

  • 1 heat oil in a nonstick pot (make sure you have a lid).
  • 2 cut onions in big chunks.
  • 3 add your onions and rice to the pan, salt the rice and cook until rice is browned.
  • 4 in a separate med sized bowl add your tomatoes,2 1/2 cups of hot water and your seasonings stir to mix.
  • 5 add to the hot pan.
  • 6 do not stir.
  • 7 let the rice boil about 10 to 15 minute.
  • 8 cover with lid and turn off the heat.
  • 9 let stand for about 45 minutes, then wa la you have delicious mexican rice!
