Mushroom Barley Soup

Ingredients

  • Servings: 6
  • 1/2 teaspoon oil
  • 1 medium onion, diced
  • 2 cups mushrooms, fresh and sliced
  • 1/4 cup pearl barley
  • 4 cups water
  • 4 cups chicken broth or 4 cups vegetable broth
  • black pepper, to taste
  • 1 pinch thyme
  • 1 bay leaf

Recipe

  • 1 heat dutch oven or large pan over medium-high heat.
  • 2 add mushrooms and onions, cook until gold, about 3 minutes.
  • 3 add all other ingredients and bring to a boil.
  • 4 reduce heat to low, and simmer until the barley is tender, about 1-1/2 hours.
