Mexican Beans And Rice

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 onion, chopped
  • 1 red pepper, chopped
  • 1 teaspoon olive oil
  • 1 garlic clove, minced
  • 19 ounces kidney beans, undrained
  • 1/4 teaspoon oregano
  • 1/4 teaspoon chili powder
  • 4 cups brown rice, cooked

Recipe

  • 1 chop onion and red pepper.
  • 2 saute in olive oil with garlic clove for 3min.
  • 3 add in kidney beans, oregano and chili powder.
  • 4 stir gently until hot and water is absorbed.
  • 5 serve over brown rice.
