Mexican Lasagna

Ingredients

- 1 lb lean ground beef
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 2 1/2 cups taco bell home originals thick 'n chunky salsa
- 1 (8 3/4 ounce) can whole kernel corn, drained
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 10 6-inch corn tortillas, divided
- 2 cups breakstone's cottage cheese
- 1 cup kraft, shredded sharp cheddar cheese
- 1 (2 1/4 ounce) can sliced pitted ripe olives
Recipe
- 1 brown meat in large skillet on medium heat; drain.
- 2 add onion and green pepper; cook until tender-crisp, stirring occasionally.
- 3 stir in salsa, corn and seasonings.
- 4 layer 1/3 of the meat sauce, 1/2 of the tortillas and 1/2 of the cottage cheese in 13x9-inch baking dish.
- 5 repeat layers, ending with meat sauce.
- 6 sprinkle with cheddar cheese and olives.
- 7 bake at 375f for 30 minutes or until thoroughly heated.
