Mexican Lasagna

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • Servings: 8
  • 1 lb lean ground beef
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 2 1/2 cups taco bell home originals thick 'n chunky salsa
  • 1 (8 3/4 ounce) can whole kernel corn, drained
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 10 6-inch corn tortillas, divided
  • 2 cups breakstone's cottage cheese
  • 1 cup kraft, shredded sharp cheddar cheese
  • 1 (2 1/4 ounce) can sliced pitted ripe olives

Recipe

  • 1 brown meat in large skillet on medium heat; drain.
  • 2 add onion and green pepper; cook until tender-crisp, stirring occasionally.
  • 3 stir in salsa, corn and seasonings.
  • 4 layer 1/3 of the meat sauce, 1/2 of the tortillas and 1/2 of the cottage cheese in 13x9-inch baking dish.
  • 5 repeat layers, ending with meat sauce.
  • 6 sprinkle with cheddar cheese and olives.
  • 7 bake at 375f for 30 minutes or until thoroughly heated.
