My Mamma's Red Clam Linguini

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 3 tablespoons olive oil
  • 8 garlic cloves, chopped small
  • 2 (14 ounce) cans ready cut canned tomatoes
  • 2 (6 ounce) cans tomato paste
  • 1 (3 lb) can clams
  • black pepper
  • 2 tablespoons basil
  • 1 1/2 teaspoons salt
  • 1 teaspoon cayenne powder
  • 1 teaspoon oregano
  • 1/2 cup dry wine

Recipe

  • 1 heat olive oil in large pot. add chopped garlic and brown. putt all other ingredients in except clams. boil and add wine.
  • 2 reduce to a simmer for 20 minutes. if it needs more liquied add clam juice. add clams, simmer for 10-15 minutes.
  • 3 serve over linguine and top with shredded parmesan cheese. serves 6-8.
