Mushroom And Herb Pilaf

Ingredients
- Servings: 4
- 20 ml soy sauce
- 1 tablespoon honey
- 250 g mushrooms
- 1/2 tablespoon olive oil
- 20 g butter
- 1 1/2 cups stock (of choice)
- 1/2 brown onion
- 1 cup rice
- 1/4 cup mixed herbs
Recipe
- 1 mix soy sauce and honey in a large dish and add mushrooms; stir to mix then cover and refrigerate for an hour.
- 2 preheat oven to 180 degrees celcius.
- 3 heat oil and butter in saucepan over medium heat; add finely chopped onion and cook until tender.
- 4 add rice, stir well; add mushroom, marinade & stock and stir well.
- 5 allow to come to boil on medium heat.
- 6 pour into 4 cup (1l) oven proof dish, and cover with a tight fitting lid.
- 7 bake for ~1 hr until rice is tender and liquid absorbed.
- 8 stir through pepper, salt, herbs (leaves roughly chopped); sit for 5 minutes then fluff with a fork.
- 9 serve hot.
