Mushroom And Herb Pilaf

Total Time: 2 hrs 15 mins Preparation Time: 15 mins Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 20 ml soy sauce
  • 1 tablespoon honey
  • 250 g mushrooms
  • 1/2 tablespoon olive oil
  • 20 g butter
  • 1 1/2 cups stock (of choice)
  • 1/2 brown onion
  • 1 cup rice
  • 1/4 cup mixed herbs

Recipe

  • 1 mix soy sauce and honey in a large dish and add mushrooms; stir to mix then cover and refrigerate for an hour.
  • 2 preheat oven to 180 degrees celcius.
  • 3 heat oil and butter in saucepan over medium heat; add finely chopped onion and cook until tender.
  • 4 add rice, stir well; add mushroom, marinade & stock and stir well.
  • 5 allow to come to boil on medium heat.
  • 6 pour into 4 cup (1l) oven proof dish, and cover with a tight fitting lid.
  • 7 bake for ~1 hr until rice is tender and liquid absorbed.
  • 8 stir through pepper, salt, herbs (leaves roughly chopped); sit for 5 minutes then fluff with a fork.
  • 9 serve hot.
