Mexi-beef

Total Time: 45 mins Preparation Time: 5 mins Cook Time: 40 mins

Ingredients

  • Servings: 3
  • 1 lb ground chuck or 1 lb any other ground beef or 1 lb ground chicken or 1 lb ground turkey
  • 1 (14 1/2 ounce) can diced tomatoes with juice
  • 3/4 cup brown rice
  • 1 cup water
  • 1 red bell pepper

Recipe

  • 1 brown up meat.
  • 2 while the meat is browning, dice up the pepper.
  • 3 drain the meat of any grease if there is any.
  • 4 put in diced peppers with meat, cook until peppers are soft.
  • 5 toss in rest of ingredients (include juice with tomatos).
  • 6 cover and simmer for 20-40 minutes (water should be gone and rice should be soft).
