Mexican Meatloaf

Ingredients
- Servings: 4
- 1 1/2 lbs ground beef
- 1/2 cup breadcrumbs
- 1 egg, beaten
- 2 shallots, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/4 teaspoon dried thyme
- 1/3 cup salsa
- 2 teaspoons rice vinegar
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Recipe
- 1 preheat oven to 350.
- 2 in a large bowl, combine all ingredients. mix thoroughly.
- 3 on a baking sheet form meat mixture into a loaf about 9x5 inches (i would use a bread pan).
- 4 bake 1 hour or until nicely browned and cooked in the center and juices run clear.
- 5 remove from oven; drain of excess grease. slice and serve.
