Mexican Meatloaf

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 1/2 lbs ground beef
  • 1/2 cup breadcrumbs
  • 1 egg, beaten
  • 2 shallots, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon dried thyme
  • 1/3 cup salsa
  • 2 teaspoons rice vinegar
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Recipe

  • 1 preheat oven to 350.
  • 2 in a large bowl, combine all ingredients. mix thoroughly.
  • 3 on a baking sheet form meat mixture into a loaf about 9x5 inches (i would use a bread pan).
  • 4 bake 1 hour or until nicely browned and cooked in the center and juices run clear.
  • 5 remove from oven; drain of excess grease. slice and serve.
