Mashed Potato Pie

Ingredients
- 2 lbs irish potatoes
- 3/4 cup cheddar cheese
- 1 cup evaporated milk
- 5 tablespoons unsalted butter
- parsley
- chives
- 3 minced garlic cloves
- salt and pepper
- 1 cup breadcrumbs
- 1/2 cup cheddar cheese
- 1 minced garlic clove
- chives
- salt and pepper
Recipe
- 1 boil potatoes in salted water until soft.
- 2 peel and mashed them with a folk or potato masher/ ricer.
- 3 add the butter, salt and chopped pepper, parsely, chives and garlic.
- 4 mix well.
- 5 add the grated cheese and evaporated milk and mix well untill smooth.
- 6 make the topping by mixing all the ingredients in a bowl.
- 7 put the potato mix in a lightly greased 9x9 pyrex dish, top with breadcrumb anf cheese mix.
- 8 bake in a preheated 350 degree oven for 25-30 minutes or until top gets golden.
- 9 let rest for 10 minutes before serving.
