Mashed Potato Pie

Total Time: 55 mins Preparation Time: 25 mins Cook Time: 30 mins

Ingredients

  • 2 lbs irish potatoes
  • 3/4 cup cheddar cheese
  • 1 cup evaporated milk
  • 5 tablespoons unsalted butter
  • parsley
  • chives
  • 3 minced garlic cloves
  • salt and pepper
  • 1 cup breadcrumbs
  • 1/2 cup cheddar cheese
  • 1 minced garlic clove
  • chives
  • salt and pepper

Recipe

  • 1 boil potatoes in salted water until soft.
  • 2 peel and mashed them with a folk or potato masher/ ricer.
  • 3 add the butter, salt and chopped pepper, parsely, chives and garlic.
  • 4 mix well.
  • 5 add the grated cheese and evaporated milk and mix well untill smooth.
  • 6 make the topping by mixing all the ingredients in a bowl.
  • 7 put the potato mix in a lightly greased 9x9 pyrex dish, top with breadcrumb anf cheese mix.
  • 8 bake in a preheated 350 degree oven for 25-30 minutes or until top gets golden.
  • 9 let rest for 10 minutes before serving.
