Lime And Onion Brown Rice

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 cups uncooked brown rice (quick cooking)
  • 1 3/4 cups water
  • 1 -2 chicken bouillon, cube(s)
  • 1 teaspoon olive oil
  • 1/2 of medium onion, chopped
  • 2 -3 limes
  • cilantro, chopped

Recipe

  • 1 chop onion and cilantro.
  • 2 bring water and bouillon to boil in sauce pan, adding brown rice. simmer with lid on for 5 minutes, turn heat off, and allow rice to sit for another 5 minutes.
  • 3 meanwhile, saute diced onions in olive oil until lightly browned and softened.
  • 4 transfer onions to same pan as rice; stir. squeeze juice from the limes over rice mixture; stir.
  • 5 garnish with cilantro, optional. serve immediately.
