Lemon Pineapple Chicken Peking Style

Ingredients

  • Servings: 2
  • 1 tablespoon soy sauce
  • 2 tablespoons chicken bouillon
  • 1 garlic clove, crushed
  • 16 ounces chicken breasts, boneless skinless
  • 2 teaspoons cornstarch
  • 2 tablespoons lemon juice
  • 1/2 cup water
  • 1/4 cup rice vinegar
  • 1 tablespoon rice vinegar
  • 1 cup pineapple chunk
  • 1/2 cup carrot, grated
  • 1 bell pepper, cut into 1-1/2 inch squares
  • 3 scallions, diced
  • 1 teaspoon lemon zest
  • 1 cup lettuce, shredded

Recipe

  • 1 mix soy sauce, bouillon, and garlic together.
  • 2 smear onto chicken so all the chicken gets coated.
  • 3 marinate for 15 minutes .
  • 4 broil chicken, turning once, until done.
  • 5 sauce:.
  • 6 while chicken is broiling make the sauce.
  • 7 stir cornstarch into lemon juice, water, and rice vinegar in a sauce pan.
  • 8 add pineapple chunks, carrots, bell pepper, scallions, and lemon zest.
  • 9 cook until sauce is thickened.
  • 10 when chicken is broiled, plate; pour sauce over chicken; border with lettuce.
