Lemon Pineapple Chicken Peking Style

Ingredients

- 1 tablespoon soy sauce
- 2 tablespoons chicken bouillon
- 1 garlic clove, crushed
- 16 ounces chicken breasts, boneless skinless
- 2 teaspoons cornstarch
- 2 tablespoons lemon juice
- 1/2 cup water
- 1/4 cup rice vinegar
- 1 tablespoon rice vinegar
- 1 cup pineapple chunk
- 1/2 cup carrot, grated
- 1 bell pepper, cut into 1-1/2 inch squares
- 3 scallions, diced
- 1 teaspoon lemon zest
- 1 cup lettuce, shredded
Recipe
- 1 mix soy sauce, bouillon, and garlic together.
- 2 smear onto chicken so all the chicken gets coated.
- 3 marinate for 15 minutes .
- 4 broil chicken, turning once, until done.
- 5 sauce:.
- 6 while chicken is broiling make the sauce.
- 7 stir cornstarch into lemon juice, water, and rice vinegar in a sauce pan.
- 8 add pineapple chunks, carrots, bell pepper, scallions, and lemon zest.

- 10 when chicken is broiled, plate; pour sauce over chicken; border with lettuce.
