Mexican Rice Pilaf

Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 teaspoon minced garlic
  • 1 1/2 cups vegetable broth
  • 1 1/2 cups quick-cooking brown rice
  • 2 teaspoons chili powder
  • 1 jalapeno pepper, seeded and minced
  • 1/2 teaspoon ground cumin
  • 1 red bell pepper, chopped
  • 1 large tomato, seeded and chopped
  • 1 cup shredded monterey jack cheese

Recipe

  • 1 in a large saucepan, heat oil over medium high heat.
  • 2 add onion and garlic; cook for 3 minutes, stirring occasionally.
  • 3 stir in broth, rice, chili powder, jalapeno peppers, and cumin.
  • 4 cover, and bring to a boil over high heat.
