Mushroom Barley Casserole

Total Time: 1 hr 20 mins Preparation Time: 30 mins Cook Time: 50 mins

Ingredients

  • Servings: 6
  • 5 cups sliced mushrooms
  • 1 cup chopped onion
  • 1/2 cup butter
  • 1 1/2 cups pearl barley
  • 1 (4 ounce) can pimentos, coarsley chopped
  • 1/2 teaspoon salt
  • 2 cups chicken stock
  • 1/8 teaspoon pepper

Recipe

  • 1 set oven to 350 degrees f.
  • 2 saute mushrooms and onions in butter until soft.
  • 3 add barley, cook until barley is lightly browned.
  • 4 add remaining ingredients.
  • 5 transfer to a large casserole dish.
  • 6 cover and bake 50 to 60 minute until barley is tender and liquid is absorbed.
