Mushroom Barley Casserole

Ingredients
- Servings: 6
- 5 cups sliced mushrooms
- 1 cup chopped onion
- 1/2 cup butter
- 1 1/2 cups pearl barley
- 1 (4 ounce) can pimentos, coarsley chopped
- 1/2 teaspoon salt
- 2 cups chicken stock
- 1/8 teaspoon pepper
Recipe
- 1 set oven to 350 degrees f.
- 2 saute mushrooms and onions in butter until soft.
- 3 add barley, cook until barley is lightly browned.
- 4 add remaining ingredients.
- 5 transfer to a large casserole dish.
- 6 cover and bake 50 to 60 minute until barley is tender and liquid is absorbed.
