Manchego Crackers

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 24
  • 8 tablespoons unsalted butter, room temperature
  • 1 3/4 cups manchego cheese, coarsely grated
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • 1 cup leveled all-purpose flour
  • 1 cup crisp rice cereal

Recipe

  • 1 preheat oven to 350ºf.
  • 2 in a large bowl, beat butter, cheese, salt and cayenne with an electric mixer until combined.
  • 3 gradually stir in flour until just incorporated. add rice cereal, mix to combine.
  • 4 form rounded tablespoons of dough into discs, 1-1/2" across. arrange on baking sheets, about 2" apart.
  • 5 bake until golden brown around the edges, 15 to 20 minutes.
  • 6 transfer to a wire rack to cool completely. serve or store in airtight container for up to 5 days.
