Manchego Crackers

Ingredients

- 8 tablespoons unsalted butter, room temperature
- 1 3/4 cups manchego cheese, coarsely grated
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1 cup leveled all-purpose flour
- 1 cup crisp rice cereal
Recipe
- 1 preheat oven to 350ºf.
- 2 in a large bowl, beat butter, cheese, salt and cayenne with an electric mixer until combined.
- 3 gradually stir in flour until just incorporated. add rice cereal, mix to combine.
- 4 form rounded tablespoons of dough into discs, 1-1/2" across. arrange on baking sheets, about 2" apart.
- 5 bake until golden brown around the edges, 15 to 20 minutes.
- 6 transfer to a wire rack to cool completely. serve or store in airtight container for up to 5 days.
