Leek Fried Rice With Fried Eggs

Ingredients

  • Servings: 2
  • 3 tablespoons peanut oil, divided
  • 3 tablespoons diced ginger, divided
  • 1/3 cup diced leek ( part only)
  • 2 garlic cloves, minced
  • 2 cups cooked jasmine rice, cold
  • 2 teaspoons light soy sauce
  • 1 chopped tomato
  • 2 green onions, sliced on diagonal
  • 2 teaspoons sesame oil
  • 2 eggs

Recipe

  • 1 fry eggs.
  • 2 heat 2 tablespoons oil in wok; add 2 tablespoons ginger and fry until golden brown, about 5 minutes. drain and set aside.
  • 3 heat remaining 1 tablespoon oil in wok. add leek and sauté 5 minutes. add garlic and remaining 1 tablespoon ginger; cook 2 minutes. add rice; stir-fry until slightly colored, about 4 minutes. add soy sauce and cook 2 minutes.
  • 4 place rice on platter; top with green onion, sesame oil, fried ginger, and eggs.
