Kim's Savoury Rice (microwave)

Ingredients
- Servings: 10
 
- 1 tablespoon butter 
 
- 1 onion, chopped 
 
- 4 shallots, sliced 
 
- 3 -4 slices bacon, chopped 
 
- 3 cups chicken stock, very hot 
 
- 1/4 cup pine nuts 
 
- 2 cups rice, uncooked 
 
Recipe
- 1 melt butter in pan, saute onions, shallots, bacon and pine nuts 3-5 minutes. 
 
- 2 move to a large glass bowl; add rice and stock. 
 
- 3 cook on high power, covered 18 - 20 mins (depending on power), stirring every 5 minutes or so. 
 
- 4 stand 5 minutes.
