Meat-ball Soup

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 lb ground beef
  • 1 garlic clove, minced
  • 2 sprigs parsley, chopped
  • 1/4 teaspoon marjoram
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon onion salt
  • 1 1/2 teaspoons salt
  • 1 dash pepper
  • 1 egg
  • flour
  • 2 beef bouillon cubes
  • 4 cups water
  • 1 (15 ounce) can tomatoes
  • 1 bay leaf, dried and crumbled
  • 4 tablespoons uncooked rice

Recipe

  • 1 mix first 6 ingredients, 1/2 tsp salt, pepper and 1 egg. shape into 32 tiny balls; dredge with flour.
  • 2 bring bouillon cubes, water, tomatoes, 1 tsp salt and bay leaf to boil in a dutch oven.
  • 3 add meatballs and rice, cover and simmer 45 minutes.
  • 4 serve immediately.
  • 5 *you can also use beef broth instead of the bouillon cubs. you would need 4 cups of it.
