Ingredients
- Servings: 50
- 2 1/2 lbs rice
- 12 lbs mincemeat
- 2 lbs onions
- 2 1/2 pints tomato puree
- 1 1/4 lbs peas
- 2 1/2 quarts stock
- 1/2 cup parsley
- 2 tablespoons salt
- 1/2 teaspoon pepper
Recipe
- 1 simmer mince and tomato puree for about 20mins.
- 2 fry onions in hot fat until brown.
- 3 add uncooked rice and brown lightly.
- 4 add stock and seasonings bring to the boil.
- 5 pour into baking dish and bake in hot oven for 15mins.
- 6 add meat and peas and mix well.
