Low-fat Spaghetti Or Fettuccine Carbonara

Ingredients

  • Servings: 4
  • 1 (8 ounce) package spaghetti or 1 (8 ounce) package fettuccine pasta
  • 2 (4 ounce) cartons egg substitute
  • 1/2 cup shredded low-fat swiss cheese
  • 1 ounce grated parmesan cheese
  • 2 tablespoons chopped fresh chives
  • 1/2 tablespoon chopped fresh parsley (italian kind preferred)
  • 1/2 tablespoon chopped fresh oregano
  • 1 tablespoon unsalted butter
  • 2 ounces thinly sliced turkey ham, cut in julienne strips
  • 1 shallot, finely chopped
  • 1 teaspoon pepper

Recipe

  • 1 cook pasta according to package directions; drain.
  • 2 in a bowl, whisk together the first five ingredients (egg substitute through parsley.
  • 3 in a skillet, stir-fry ham and shallot 1-2 minutes over medium heat until shallot is soft and translucent.
  • 4 add pasta to the skillet and pour in the egg mixture; continue cooking, while tossing continuously, about 2-3 minutes until the sauce thickens enough to coat the pasta.
  • 5 season with pepper and serve.
