Macaroni And Cheese For A Crowd

Ingredients
- 20 lbs american cheese
- 5 gallons 1% low-fat milk
- 4 lbs salted butter
- 12 cups flour
- 20 lbs elbow macaroni
- 1/4 cup salt
Recipe
- 1 in huge stockpot, melt butter and flour.
- 2 cook until roux is formed.
- 3 in industrial size trunin, (huge kettle), add milk and cheese. cook until cheese is melted and blended.
- 4 add rue.
- 5 in other kettle, cook macaroni noodles.
- 6 drain, and add to cheese mixture.
- 7 stir until thickened.
