Mexican Rice

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1/2 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1 minced garlic clove
  • 2 teaspoons oil
  • 1 cup long grain rice
  • 1 (15 ounce) can diced tomatoes with juice
  • 1 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1 1/2 cups beef broth

Recipe

  • 1 in a heavy skillet saute onion, green bell pepper and garlic in oil until onion is softened.
  • 2 add rice to skillet and cook over medium-high heat until rice has browned.
  • 3 add tomatoes, chili powder , salt, and beef broth.
  • 4 bring to a boil; cover, lower heat, and simmer until liquid has been absorbed, about 20 minutes.
  • 5 taste and add more salt if needed.
