Macaroni And Cheese Casserole

Ingredients

- cooking spray
- 8 ounces elbow macaroni, uncooked
- 10 3/4 ounces 98% fat free cream of celery soup
- 1 cup fat-free mayonnaise
- 8 ounces low-fat cheddar cheese, shredded
- 1/2 medium sweet red pepper, chopped
- 6 ounces pimientos, chopped
- 4 ounces whole wheat crackers, crumbled
Recipe
- 1 preheat oven to 400 degrees.
- 2 coat 9x10 baking dish with cooking spray.
- 3 cook macaroni in a large pot of boiling water until just tender (approx. 7 min).
- 4 drain macaroni and transfer to a large pot.
- 5 add soup, maonnaise, cheese, pepper and pimentos; mix well to combine with pasta.
- 6 transfer mixture to prepared baking dish and top with cracker crumbs.
- 7 bake, uncovered, until top is golden, about 20 to 25 minutes.
