Linguini With Fresh Heirloom Tomatoes

Ingredients

- 1 lb linguine
- 8 ounces goat cheese, crumbled
- 6 tablespoons butter
- 2 shallots, minced
- 1/2 cup wine
- 1/4 cup fresh parsley, minced
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh tarragon, chopped
- 2 tablespoons fresh thyme, chopped
- 2 cups heirloom tomatoes, chopped
- salt & freshly ground black pepper
Recipe
- 1 bring a large pot of salted water to a boil and cook pasta according to package directions; drain, reserving 1/2 cup cooking liquid.
- 2 in a medium saucepan, melt butter over medium low heat; add shallots and cook until softened, about 5 minutes.
- 3 stir in wine and cook about 2 minutes, add parsley, dill, tarragon, and thyme; add in reserved cooking liquid.
- 4 add pasta to a serving bowl, toss in goat cheese, add herb mixture and toss; add in the tomatoes and toss again.
- 5 season with salt and pepper and serve.
