Linguini With Fresh Heirloom Tomatoes

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb linguine
  • 8 ounces goat cheese, crumbled
  • 6 tablespoons butter
  • 2 shallots, minced
  • 1/2 cup wine
  • 1/4 cup fresh parsley, minced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh tarragon, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 cups heirloom tomatoes, chopped
  • salt & freshly ground black pepper

Recipe

  • 1 bring a large pot of salted water to a boil and cook pasta according to package directions; drain, reserving 1/2 cup cooking liquid.
  • 2 in a medium saucepan, melt butter over medium low heat; add shallots and cook until softened, about 5 minutes.
  • 3 stir in wine and cook about 2 minutes, add parsley, dill, tarragon, and thyme; add in reserved cooking liquid.
  • 4 add pasta to a serving bowl, toss in goat cheese, add herb mixture and toss; add in the tomatoes and toss again.
  • 5 season with salt and pepper and serve.
