Mince & Pasta Family Meal

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 500 g beef mince
  • 250 g cooked pasta
  • 2 tablespoons oil
  • 1 onion
  • 2 garlic cloves
  • 1 small green capsicum
  • 1 small red capsicum
  • 1 cup broccoli
  • 1 cup beans
  • 1 can of peeled tomato
  • 1 tablespoon herbs
  • 1 beef stock cube
  • half a cup hot water
  • half cup tomato paste
  • parmesan cheese

Recipe

  • 1 boil water to cook pasta - any kind is fine (shells, penne).
  • 2 while pasta is cooking.
  • 3 chop all vegetables finely.
  • 4 in a large fry pan (i use electric).
  • 5 on medium heat to high heat.
  • 6 add the oil.
  • 7 add the onions and garlic, stir til just cooked.
  • 8 add the mince and brown through.
  • 9 add the rest of the vegetables.
  • 10 stir well.
  • 11 to half a cup of hot water, add the beef stock cube (i use massell).
  • 12 mix til dissolved.
  • 13 add stock and the tomato paste to the pan and stir.
  • 14 drain off the pasta.
  • 15 add the pasta to the pan (or into the bowls).
  • 16 simmer for 10 minutes covered, stirring twice.
  • 17 serve with parmesan cheese on top.
