Pineapple-ham Barbecue Over Rice For 2

Ingredients

- 1 cup cubed cooked ham
- 1 teaspoon oil
- 1 (8 3/4 ounce) can pineapple tidbits
- 1/4 cup bottled barbecue sauce
- 1 1/2 teaspoons cornstarch
- 1/2 medium green pepper, cut in strips
- hot cooked rice
Recipe
- 1 brown meat lightly in hot oil in skillet.
- 2 drain pineapple, reserving syrup.
- 3 stir syrup and barbecue sauce into browned meat.
- 4 cover; simmer 10 minutes.
- 5 blend cornstarch with 1/3 cup cold water. stir into meat.
- 6 cook and stir till thickened and bubbly.
- 7 add the pineapple and the green pepper.
- 8 heat through.
- 9 serve over rice.
