Lemon Orzo

Total Time: 13 mins Preparation Time: 5 mins Cook Time: 8 mins

Ingredients

  • 4 cups low sodium chicken broth
  • 1 lb orzo pasta
  • 2 tablespoons olive oil
  • 1 teaspoon lemon zest
  • 3/4 teaspoon kosher salt

Recipe

  • 1 combine broth and water in a small pot and bring to a boil over high heat.
  • 2 when it boils, add orzo.
  • 3 bring back to a boil, then cover and simmer for 5 to 6 minutes, until most of the liquid has cooked off.
  • 4 remove from heat and stir in oil, zest, and salt.
  • 5 taste, adjust seasoning as desired, and serve immediately.
