Mexican Couscous

Ingredients
- Servings: 6
- 1/2 cup chopped onion
- 2 teaspoons crushed garlic
- 1 tablespoon olive oil
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1 cup chicken broth
- 1 cup frozen peas
- 1/2 cup chopped tomato
- 1 tablespoon minced cilantro
- 3/4 cup couscous
Recipe
- 1 saute onion and garlic in olive oil over medium heat until tender.
- 2 stir in cumin and chile powder, and cook for 1 minute.
- 3 add broth, peas, tomato and cilantro, and bring to a boil.
- 4 stir in couscous, cover and remove from heat.
- 5 let stand for 5 minutes.
- 6 fluff with a fork before serving.
