Mexican Couscous

Total Time: 30 mins Preparation Time: 25 mins Cook Time: 5 mins

Ingredients

  • Servings: 6
  • 1/2 cup chopped onion
  • 2 teaspoons crushed garlic
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1 cup chicken broth
  • 1 cup frozen peas
  • 1/2 cup chopped tomato
  • 1 tablespoon minced cilantro
  • 3/4 cup couscous

Recipe

  • 1 saute onion and garlic in olive oil over medium heat until tender.
  • 2 stir in cumin and chile powder, and cook for 1 minute.
  • 3 add broth, peas, tomato and cilantro, and bring to a boil.
  • 4 stir in couscous, cover and remove from heat.
  • 5 let stand for 5 minutes.
  • 6 fluff with a fork before serving.
