Mama's Chicken Provencal

Ingredients

- 1 lb boneless skinless chicken breast
- seasoned flour
- olive oil
- 1/2 cup wine
- 14 ounces diced tomatoes
- 2 garlic cloves, crushed or minced
- 1/4 cup onion, thinly sliced
- olive (optional)
Recipe
- 1 lightly flour each chicken breast in seasoned flour.
- 2 in a large skillet or pan, heat olive oil (or cooking spray) and brown the chicken on medium to med-high heat, taking care not to overcook.
- 3 remove chicken from pan and add wine, tomatoes, garlic, and onions. bring to a low simmer and cook until onions are tender and sauce is reduced to desired consistency.
- 4 add chicken and olives to sauce ad serve over hot pasta.
