Lime-garlic Chicken With Rice

Ingredients
- Servings: 6
- 1 1/4 lbs bone-in skinless chicken thighs
- 1/4 cup fresh lime juice
- 1 1/2 cups chicken broth
- 2 -3 garlic cloves, minced
- 1/2 teaspoon dried thyme
- 1/4 teaspoon pepper
- 2 tablespoons butter or 2 tablespoons margarine
- 1 cup uncooked instant rice
Recipe
- 1 place chicken in a 4-quart slow cooker; add in the next 6 ingredients.
- 2 cover and cook on low for 8-10 hours; during the last 15 minutes, stir in the rice.
- 3 remove chicken from slow cooker; place cooked rice on each individual plate.
- 4 top with chicken; spoon any remaining juices over chicken.
