Peanut Chicken Stir-fry

Ingredients

  • Servings: 4
  • 1/2 cup water, plus
  • 1 tablespoon water, divided
  • 1/4 cup peanut butter
  • 3 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 2 -3 garlic cloves, minced
  • 2 tablespoons vegetable oil
  • 1 lb boneless skinless chicken breast, cubed
  • 3 cups broccoli florets
  • 1 tablespoon cornstarch
  • hot cooked rice

Recipe

  • 1 in a small bowl, combine 1/2 cup water, peanut butter, soy sauce and brown sugar until smooth; set aside. in a skillet or wok, stir-fry garlic in oil for 30 seconds. add the chicken; stir-fry for 5 minutes or until chicken juices run clear. add broccoli; stir-fry for 5 minutes.
  • 2 stir in the peanut butter mixture; cook and stir until sauce is smooth and broccoli is crisp-tender, about 3 minutes. combine cornstarch and remaining water until smooth; add to skillet. bring to a boil; cook and stir for 2 minutes or until thickened. serve over rice.
