Mexican Crockpot Chicken

Total Time: 5 hrs 15 mins Preparation Time: 15 mins Cook Time: 5 hrs

Ingredients

  • Servings: 6
  • 1/2 cup taco seasoning (costco sells this in a large container or make your own)
  • 2 -3 lbs chicken breasts (frozen)
  • 1 (15 ounce) can tomato sauce
  • 2 (15 ounce) cans mexican beans (pink) or 2 (15 ounce) cans black beans
  • 1 cup water
  • 1 -2 cup shredded mild cheddar cheese (optional)
  • 1/2-1 cup sour cream (optional)

Recipe

  • 1 in a crockpot combine water, taco seasoning, tomato sauce and beans.
  • 2 place chicken (boneless or boned) on top.
  • 3 cover and cook approx 8 hours on low or 5-6 on high.
  • 4 once fully cooked shred chicken with 2 forks.
  • 5 allow juices to soak into chicken threads.
  • 6 serve over rice.
  • 7 we enjoy this with a dollop of sour cream and cheese.
