Minestrone

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 chopped onion
  • 2 cloves crushed garlic
  • 3 slices chopped bacon
  • 4 chopped tomatoes
  • 3 tablespoons chopped parsley
  • 2 1/4 liters beef stock
  • 60 ml red wine
  • 1 chopped carrot
  • 2 chopped potatoes
  • 3 tablespoons tomato puree
  • 80 g peas
  • 80 g pasta
  • 2 tablespoons olive oil

Recipe

  • 1 heat oil and cook the onion, garlic and bacon until browned.
  • 2 add tomato, parsley, stock and red wine.
  • 3 simmer.
  • 4 add carrot, potato, and tomato puree.
  • 5 simmer.
  • 6 add peas and pasta.
  • 7 simmer until pasta and vegetables are tender.
  • 8 season to taste.
